SHepards Pie

Boil potatoes in salted water until tender, about 12 minutes
- 2 pounds potatoes, such as russet, peeled and cubed
- 2 tablespoons sour cream or softened cream cheese
- 1 large egg yolk
- 1/2 cup cream, for a lighter version substitute vegetable or chicken broth
- Salt and freshly ground black pepper
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 3/4 pounds ground beef or ground lamb
- 1 carrot, peeled and chopped
- 1 onion, chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup beef stock or broth
- 2 teaspoons Worcestershire, eyeball it
- 1/2 cup frozen peas, a couple of handfuls
- 1 teaspoon sweet paprika
- 2 tablespoons chopped fresh parsley leaves
CUBAN RUM PUNCH

Combine all ingredients in a large bowl
- 4 oz white rum
- 4 oz Captain Morgan spiced rum
- 1 oz simple syrup
- 6 oz pina colada mix
- 36 oz pineapple juice
- 40 oz red wine
- 20 oz white grape juice
AMARETTO CAKE

Place rack in the center of the oven and preheat to 350°F
- 1 box (18.5-ounce) plain yellow cake mix with pudding
- 3/4 cup amaretto, plus 3 1/2 Tbsp for glaze
- 1/2 cup sugar
- 4 eggs
- 1/2 cup oil
- 1/4 tsp almond extract
- 1/3 cup slivered almonds, toasted for garnish
- 1 cup sifted confectioners’ sugar
EASY CHOCOLATE SHORTBREAD

Preheat oven to 325°. In a medium bowl, combine flour, sugar, and cocoa powder

- 1/4 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 cup butter

Chicken Mojito with Mint and Lime over Couscous

This definitely has an unusual flavor
- 1 cup couscous
- 24 asparagus spears
- 1 tsp garlic powder
- salt and freshly ground pepper to taste
- 2 tsp olive oil
- 1/2 cup chopped red onion
- 2 cloves garlic, minced
- 1 Tbsp sugar
- 1 lb. boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup light rum
- 1/2 cup chicken broth
- 2 Tbsp lime juice
- 2 tsp finely grated lime zest
- 1/4 cup chopped fresh mint
DOUBLE CHOCOLATE CHUNK COOKIES

These always turn out flat! What can I do to make them thicker?
- 1 cup All-Purpose Flour
- 1/2 cup Unsweetened Dutch-Process Cocoa Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 8 oz Good Quality Milk Chocolate (4 oz coarsely chopped, 4 oz cut into 1/4” chunks)
- 1 stick Unsalted Butter
- 1 1/2 cup Sugar
- 2 Large Eggs
- 1 tsp Vanilla Extract
Chicken with Artichoke Hearts

Heat oil in a large skillet over high heat
- 2 Tbsp Olive Oil
- 1 1/2 lbs. Chicken, cut in 1 1/2 inch chunks
- Coarse Salt and Ground Pepper
- 4 Garlic Cloves, minced
- 1 sp. Dried Oregano
- 1/4 tsp Crushed Red Pepper
- 1/4 cup Red-Wine Vinegar
- 1 Red Bell Pepper, cut into strips
- 1 can Artichokes, quartered
- 4 oz Feta Cheese, crumbled
Pan Fried Daikon Cake

Place the daikon in a large bowl and sprinkle with the salt
- 1 1/2 cups daikon radish (grated) 2 tsp salt
- 1 clove garlic (minced)
- 1/2 red onion (chopped)
- 1 egg (beaten)
- 1/2 cup Italian seasoned bread crumbs
- 1/2 tsp ground black pepper
- 1/2 teaspoon paprika
- 1/2 tsp chile-garlic sauce (such as Sriracha)
- 1 1/2 cups vegetable oil for frying
