Chicken with Capers

Place chicken breast halves between sheets of plastic wrap
- 4 Skinless, boneless chicken breast halves
- 1 tablespoon Dijon mustard
- 1/2 cup Seasoned Fine Breadcrumbs
- 2 tablespoons Extra Virgin Olive Oil
- 3 tablespoons Butter
- 2 tablespoons Capers
- 2 Lemons
- Pinch Dried Thyme
WHITE FROSTING

- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 2 to 3 Tbsp milk
EASY FRUIT CRISP

Preheat oven to 425°F. Pour fruit into lightly buttered 2-quart baking dish
- 2 cans Del Monte Sliced Fruit or Fruit Filling
- 2 pkgs. Cinnamon and Spice Instant Oatmeal, uncooked
- 1/3 cup Flour
- 1/2 cup Walnuts, chopped
- 1/3 cup Butter, melted
Chicken with Ginger

Peel ginger and cut into 1/8” matchsticks
- 3 -inch piece Fresh Ginger
- 1 1/2 lbs. Boneless Skinless Chicken, cut into 1 1/2” chunks
- 2 Tbsp Oil
- 1 Large Onion, thinly sliced
- 2 Garlic Cloves, minced
- 1/4 cup Soy Sauce
- 2 Tbsp White Vinegar
- 2 Tbsp Sugar
- 1/2 cup scallions, sliced
Bing Cherry Mojitos

I use sprite instead of sparkling water to make this a sweeter drink
- 1 1/4 cups Sugar
- 1 1/4 cups Fresh Lime Juice (about 9 limes)
- 3 lbs Bing Cherries
- 18 oz Black Cherry or Plain Vodka
- 1 Bottle (750 mL) Sparkling Water
Sweet and Sour Chicken

For the chicken, cut boneless chicken breasts into chunks
- Chicken:
- 3-4 boneless, skinless chicken breasts
- Salt and pepper
- 1 cup cornstarch
- 2 -3 eggs, beaten
- 1/4 cup canola oil
- 1 bell pepper, cubed
- 1 can pineapple chunks (drained - juice reserved)
- Sauce:
- 3/4 cup sugar
- 1/4 cup pineapple juice
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon garlic salt
Mexican Rice Salad

Bring Chicken Broth to a boil in medium saucepan, add rice and bring to a boil again
- 1 cup White Rice
- 2 c. Chicken Broth
- 2 Tbsp Lime Juice
- 1 1/2 tsp Chili Powder
- 3/4 tsp Salt
- 1/4 tsp Cumin
- 1/4 tsp Pepper
- 2 Tbsp Olive Oil
- 1 can Corn
- 1 Red Bell Pepper, diced
- 1 rib Celery, diced
- 1/2 small Purple Onion, diced
- Cilantro
Chicken with Mushrooms

Preheat oven to 350°F. Place mushrooms in the bottom of a 9x13 pan
- 3 c. Mushrooms, sliced
- 4 Chicken Breast, boneless-skinless
- 2 Eggs, beaten
- 1 cup Seasoned Bread Crumbs
- 2 Tbsp Butter
- 6 oz Mozzarella Cheese, sliced
- 3/4 cup Chicken Broth
TEXAS SHEET CAKE

Mix together in a large bowl eggs, vanilla and sour cream
- Cake:
- 2 eggs
- 2 tsp vanilla
- 1/2 cup sour cream
- 2 cups sugar
- 2 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 2 sticks butter
- 1 cup water
- 2 Tbsp cocoa powder
- Icing:
- 6 Tbsp milk
- 4 rounded Tbsp cocoa powder
- 1 stick butter
- 1 lb powdered sugar
- 2 tsp vanilla
Mushroom Ragout

In large skillet over medium-low heat, melt butter with olive oil
- 2 Tbsp Butter
- 1 Tbsp Olive Oil
- 1 small Shallot, minced
- 1 1/2 lbs. small White Mushrooms, halved
- 1 tsp fresh Thyme
- 1/4 cup dry Red or White Wine, or water
- Salt and Pepper
