Mushroom Chicken by Pampered Chef

This was okay - might be good with additional broth and made into soup
- 2 lbs. chicken breasts, boneless-skinless
- 4 slices bacon, cooked
- 1 can Cream of Mushroom Soup
- 1 c. milk
- 8 oz. mushrooms, sliced
- 2-3 cloves galric, minced
- 2 Tbsp. lemon juice
- 2 T. Worcestershire sauce
- Parmesan Cheese
TOFFEE BLONDIES

I have tried halving the amount of toffee and white chocolate and they just weren’t as good!
- 1 Stick unsalted Butter, melted
- 1 cup Light Brown Sugar, packed
- 2 Large Eggs
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- 1 1/2 c. All-Purpose Flour
- 1 cup Toffee Bits
- 1 cup White Chocolate Chips
Crisp Mashed Potato Cakes

Preheat oven to 425. Heat a large nonstick skillet over medium heat
- Cooking spray
- 1/2 cup chopped green onions
- 2 cups mashed potatoes, chilled
- 2 Tbsp extra sharp cheddar cheese, shredded
- 1/8 tsp salt
- 1/8 tsp fresh ground black pepper
- 1 bacon slice, cooked and crumbled
- 3/4 cup panko (Japanese breadcrumbs)
Buffalo Chicken Pizzas

Look for NAAN Bread instead of pita
- 4 pita bread rounds
- 1/4 cup ranch dressing
- 1 cup cooked chicken
- 3/4 cup celery, thinly sliced
- Mozzarella cheese
- Bottled hot pepper sauce
Ginger Rice

Bring ginger, sugar, salt and 2 ½ cups water to a boil in a medium saucepan; boil 2 minutes
- 2 Tbsp Fresh Ginger, peeled and grated
- 1 tsp Sugar
- 1 tsp Coarse Salt
- 2 c. Jasmine Rice
Greek Cucumbers

In small bowl, whisk all ingredients except cucumbers
- 2 c. sliced Cucumbers
- 1/2 cup plain nonfat yogurt
- 1 Tbsp Fresh Dill, chopped
- 2 tsp red-wine vinegar
- 1 tsp sugar
Butter Lemon Basted Chicken

Brush chicken pieces on all sides with lemon juice
- 2 1/2 to 3 lbs. Chicken
- 1/4 cup Lemon Juice
- 3/4 cup Sweet Cream Butter
- 2 tsp Salt
- 1 to 2 tsp Summer Savory Seasoning
- 1/2 to 1 tsp Dry Mustard
- 2 tsp Sugar
Green Bean Salad

In a large saucepan of lightly salted water, cook the green beans uncovered for 7 to 9 minutes or until tender
- 2 lbs. Green Beans, cut into 2-inch pieces
- 1/4 cup Olive oil
- 2 Tbsp Sherry Vinegar
- 2 tsp Dijon Mustard
- 1/4 tsp Salt
- 1 pint Cherry Tomatoes, halved
- 2 oz Feta Cheese, crumbled
Chicken Breast Saute

In a 10-inch skillet, melt 2 tablespoons butter over medium heat
- 4 Tbsp Butter
- 4 Boneless, Skinless Chicken Breast Halves
- 2 Tbsp All-Purpose Flour
- Salt and Pepper
- 1/2 cup Shallots, chopped
- 1 cup Red Potatoes, peeled and diced
- 1 cup Chicken Broth
- 2 Sprig Fresh Thyme, plus more for garnish
- 6 oz Green Beans, trimmed and cut (about 1 cup)
