In a bowl, combine the first 5 ingredients; set aside
- 1 Tbsp Soy Sauce
- 2 Cloves Garlic
- 1 tsp Sesame Seeds, toasted
- 1 tsp Brown Sugar
- 1 tsp Peanut Butter
- 3/4 lb. Fresh Green Beans, trimmed
- 1 Tbsp Vegetable Oil
Spaghetti Squash Recipe

1. Preheat oven to 350 degrees F (175 degrees C)
- 1 spaghetti squash, halved lengthwise and seeded
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 1 clove garlic, minced
- 1 1/2 cups chopped tomatoes
- 3/4 cup crumbled feta cheese
- 3 tablespoons sliced black olives
- 2 tablespoons chopped fresh basil
Herbed Green Beans

Bring ½ - inch water to boil in a 10-inch covered non-stick skillet
- 1 lb green beans
- 2 tsp olive oil or butter
- 3 large thinly sliced shallots
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tsp grated lemon zest
- 1/4 cup thinly sliced basil leaves
- Lemon wedges, for garnish
Chicken Cacciatore

Over medium-high heat, melt butter till brown and hot; add chicken and brown on all sides
- 2 Tbsp butter
- 4 chicken breast, boneless-skinless and cut into halves
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 cup white wine
- 1 chicken bouillon cube
- 4 oz can tomato sauce
- 14 oz can diced tomatoes
- 2 cups sliced mushrooms
- 1 tsp each: rosemary, oregano, salt
CHOCOLATE COOKIE BARS

For crust, in medium mixing bowl stir together flour and brown sugar
- 1 cup Flour
- 1/2 cup Brown Sugar
- 1/2 cup Butter
- 1 (14 oz) Can Sweetened Condensed Milk
- 2 tsp Vanilla
- 2 cups Chopped Pecans
- 1 cup Shredded Coconut
- 20 Caramels
- 2 Tbsp Milk
- 1 cup Semi-sweet Chocolate Chips
Italian New Potato Bake

Mix oil, garlic, Italian seasoning and salt with wire whisk until well blended
- 3 Tbsp Olive Oil
- 2 Cloves Garlic, minced
- 1 1/2 tsp Italian Seasoning
- 1/4 tsp Salt
- 2 lb. New Potatoes, cut into wedges
- 1/2 cup Parmesan Cheese
Chicken Enchiladas

I prefer to grill the chicken and allow to cool, but boiled or baked chicken can also be used
- 2-4 Chicken Breast, cooked and cubed
- 1 pint Half and Half
- 1 Chicken Bullion Cube
- 1/2 jar Salsa or 1 can Rotel
- 6 Flour Tortillas
- 2 c. Shredded Cheese
- 1 cup Cilantro
Chicken Marsala

Trim and pound chicken breasts or use cutlets
- 1/4 cup flour
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp oregano
- 4 Tbsp butter
- 4 Tbsp olive oil
- 4 chicken cutlets
- 1 cup mushrooms, sliced (of course we use more)
- 1/4 cup sherry
- 1/2 cup marsala
Jiffy Corn Pudding

Melt butter in dish. Put in corn and cream
- 1 can whole kernel corn, drained
- 1 can cream corn
- 1 stick butter
- 8 oz pkg. sour cream
- 1 box Jiffy corn bread mix
- 2 eggs (Optional - from Memphis corn pudding recipe)
Apple Cider-Punch

In punch bowl or large pitcher combine apple cider, orange juice and lemon juice
- 6 cups apple cider
- 2 cups orange juice, cranberry-raspberry juice, or orange mango juice
- 1/2 cup lemon juice
- 1-750 mL bottle sparkling white grape juice or sparkling wine
