Queso Blanco

Put all ingredients in a double boiler and heat on medium
- 4 cups cheese (Monterey Jack or Asadero) shredded fine
- 2 - 4 oz cans green chiles
- 1 cup half and half
- 1 thin slice onion, chopped fine
- 3 tsp cumin
- 1 1/2 tsp salt
- 3 serrano peppers, chopped fine
- 1 handful cilantro, chopped fine
Taco Soup

Served at Pampered Chef Party - makes a lot! Perfect for sharing
- 2 lbs. ground turkey
- 1 onion
- 1 can (4 oz) diced green chilies
- 2 cans corn
- 4 cans Mexican Stewed tomatoes (I use 1 can Rotel and 3 others)
- 1 can Pinto Beans
- 1 can Kidney Beans (I prefer 2 cans Navy Beans)
- Taco Seasoning packet
- Ranch Dressing/Dip packet
- Optional toppings: chopped cilantro, cheese, fritos, sour cream
Lasagna

Preheat oven to 375 degrees
- 1 lb. turkey
- 1/2 medium onion, chopped
- 9 (no Cook) Lasagna Noodles
- 1 can diced tomatoes
- 1 can Large Hunts Tomato Sauce
- 15 oz. cottage cheese
- 1 egg
- 1 cup Mozzarella Cheese (plus some for topping)
- 1/4 cup Parmesan Cheese plus some for topping
- 1/2 tsp. basil
Garlic Green Beans

In a small bowl, combine the oil, vinegar, onion, garlic, salt and pepper
- 1 tablespoon olive oil
- 1 1/2 teaspoons cider vinegar
- 1 teaspoon dried minced onion
- 1 garlic clove, minced
- 1/4 teaspoon salt
- Dash pepper
- 1 1/2 cups frozen cut green beans, thawed (we used fresh)
- 1 tablespoon dry bread crumbs
- 1 tablespoon grated Parmesan cheese
- 1 teaspoon butter, melted

Thai Noodle Bowl

- 8 ounces angel hair pasta (probably any pasta will do)
- olive oil or peanut oil
- 14 oz hard tofu (Dorthy used chicken breasts rather than the tofu)
- 1 bunch green onions (try less)
- 8 oz mushrooms
- 16 oz Chicken stock (try less - I think it's too soupy)
- 1 chicken cube
- black pepper (season to taste)
- 1 T brown sugar

- 2 cups sugar
- 1 1/2 cups flour
- 1/3 cup cocoa
- 4 eggs beaten and added one at a time
- 1 cup pecans
- Marshmallow cream
- 1/2 stick butter
- 1 tsp vanilla
- 1/4 cup evaporated milk
- 1/2 box powdered sugar
- 3 Tbsp cocoa
