Butternut Squash Pot Stickers

Put squash, 2 tablespoons soy sauce, sugar, and salt in a medium saucepan
- 1 lb butternut squash (peeled and seeded cut into 1/2" pieces)
- 1/2 cup plus 2 tbs soy sauce
- 3 tbs packed brown sugar
- 1/4 tsp salt
- 2 scallions (white and pale-green parts only, thinly sliced)
- 1 tsp fresh ginger (peeled/grated)
- 1/4 tsp sesame seeds
- 20 wonton wrappers (thawed if frozen)
- 1/4 cup canola oil
BROWNIE PIE

- 2 oz German sweet chocolate
- 1/2 cup butter
- 3 eggs
- 1/2 cup sugar
- 1/2 cup brown sugar, firmly packed
- 1/2 cup flour
- 1 tsp vanilla
- 3/4 cup chopped pecans
- Whipped cream, optional

- Cupcakes:
- all-purpose flour - 1.5 cups
- baking powder - 1.5 teaspoons
- salt - 1/2 teaspoon
- unsalted butter, softened - 1/2 cup (1 stick)
- granulated sugar - 1 cup
- eggs - 2 at room temperature
- limes - zest and juice of 1.5
- tequila (blanco) - 2 tablespoons for cupcakes, 1-2 tablespoons to brush the tops of cupcakes
- pure vanilla extract - 1/4 teaspoon
- buttermilk - 1/2 cup
- Tequila-Lime Frosting:
- unsalted butter, softened - 3/4 cup (1 1/2 sticks)
- powdered sugar - 3cups
- lime juice - 1 tablespoon
- tequila (blanco) - 2 tablespoons
- salt - a pinch
- coarse sea salt for sprinkling - 2 tablespoons
Texas Trash

Mix all wet ingredients in measuring cup
- 1 cup Wesson Oil
- 1 tsp Tabasco
- 1 Tbsp Worcestershire
- 1 Tbsp Garlic Salt
- 1 Tbsp Celery Salt
- 1 Tbsp Chili Powder
- 2 cans Mixed nuts
- 1/2 box each: Wheat, Rice and Corn Chex, and Cheerios
- 1/2 bag Pretzel Sticks
Elliot's Pulled Pork

Make a paste, Rub onto pork tenderloin, top and bottom
- Rub:
- Pok Tenderloin
- 1 tsp broiled steak seasoning (not sure what this is)
- 1 tsp chili powder
- 1/2 tsp chili pepper flakes
- 1 tsp cumin
- 1 tsp paprika
- 2 cloves garlic, minced
- 1 Tbsp salt
- 1/2 tsp dry mustard
- 1 tsp pepper
- 1 1/2 Tbsp brown sugar
- 1 Tbsp canola oil
- Mop:
- 1/2 cup vinegar
- 1/4 cup water
- 1 Tbsp Worcester
- 1/2 Tbsp salt
- 1/2 Tbsp pepper
- 1 tsp oil
Vogel Salsa

- 1 can white corn
- 1 (28 oz) can diced tomatoes
- 1 (4oz) can chopped green chilies
- 1 (4 oz) can chopped jalapenos
- 1 bottle Italian dressing
- 4 chopped fresh tomatoes
- 1 cup chopped red onion
- 2-3 crushed garlic cloves
- 1 tsp cumin
- 1/4 tsp black pepper
- pinch of oregano
- pinch of red pepper flakes
- fresh parsley and chives (optional)
Beef & Broccoli

1. Slice the flank steak ACROSS the grain
- 1/2 pound flank or sirloin steak
- 1 1/2 teaspoons soy sauce
- 1 teaspoon cornstarch
- Freshly ground black pepper
- 1 pound broccoli, cut into bite-size florets
- 1 tablespoon high-heat cooking oil (canola, vegetable, rice)
- 1 clove garlic, finely minced
- 1 teaspoon grated fresh ginger
- FOR THE STIR FRY SAUCE
- 3 tablespoons oyster sauce
- 2 teaspoons Chinese rice wine (or dry sherry)
- 2 teaspoons Chinese black vinegar (or young balsamic vinegar)
Refried Beans (Crockpot)

We got this recipe from BAM and tried it with black beans - yum!
- 1 onion, peeled & halved
- 3 c. dry pinto beans
- 1/2 fresh jalapeno (seeded & chopped)
- 2 Tbsp minced garlic
- 5 tsp salt (BAM uses less)
- 1 3/4 tsp black pepper
- 1/8 tsp ground cumin (BAM uses a little more)
- 1 tsp chili powder
- 9 cups water
Warm Artichoke and Salsa Dip

Drain artichoke heart; discard marinade
- 1 (12-ounce) jar marinated artichoke hearts
- 1/3 cup sliced green onions
- 2 Tbsp bottles green salsa
- 1/2 cup Monterey Jack cheese
- 1/4 cup sour cream
- 1/4 cup fresh cilantro, chopped
