Chocolate Roulade

Freshly brewed coffee gives this dessert a subtle mocha flavor, but water can be substituted
- 7 ounces semisweet chocolate, chopped (about 1 cup)
- 1/4 cup plus 1 tablespoon brewed coffee (or water)
- 7 large eggs, separated
- 1 cup granulated sugar
- Unsweetened Dutch-process cocoa powder, for dusting
- 1 cup heavy cream
- 2 tablespoons confectioners' sugar
Apple Empanadas with Almond Pastry Cream

Preheat the oven to 400 degrees F
- 2 to 3 tablespoons unsalted butter
- 3 large Granny Smith apples, cored, peeled and cut into 1-inch dice
- 3 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- Pinch salt
- Bench flour, for dusting
- Almond Pastry Cream, at room temperature, recipe follows
- 1 box frozen puff pastry, thawed according to package directions
- 1 large egg, beaten
- Turbinado sugar
Granola

1. Preheat oven to 325 degrees
- 4 cups old-fashioned oats
- 1 cup chopped almonds
- 1 cup chopped pecans
- 1 cup chopped dried cherries
- 1 cup sweetened coconut flakes
- 1 teaspoon ground cinnamon
- Pinch of salt
- 1/3 cup canola oil
- 1/4 cup honey
- 1/2 cup dark brown sugar
- 1 teaspoon vanilla extract
Strawberry Torte

- Unsalted butter, for pan
- 8 extra-large eggs, room temperature, separated
- 1/2 cup granulated sugar
- 1/2 cup cake flour (not self-rising)
- 2 teaspoons sifted baking powder
- 1 1/2 teaspoons pure vanilla extract
- 1 pint heavy cream
- 2 tablespoons confectioners' sugar, plus more for work towel
- 1 quart strawberries, washed, dried, and hulls removed
Chicken Milano

1.In a large saucepan over low heat, melt butter; add garlic and cook for 30 seconds
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup chicken broth, divided
- 1 cup heavy cream
- 1 pound skinless, boneless chicken breast halves
- salt and pepper to taste
- 2 tablespoons vegetable oil
- 2 tablespoons chopped fresh basil
- 8 ounces dry fettuccini pasta
Sweet Potato Casserole

- 2 1/2 pounds sweet potatoes (about 3 large), scrubbed
- 2 large eggs, lightly beaten
- 3 tablespoons unsalted butter, melted, plus more for the preparing the pan
- 2 tablespoons packed dark brown sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- Pinch freshly grated nutmeg
- Freshly ground black pepper
- 1/4 cup coarsely chopped pecans
Broccoli Salad

remove brocolli flourets from stems and chop up into bite size pieces
- Salad:
- 1 head a broccoli (or 1 bag of broccoli slaw)
- 12 pieces of bacon fried and crumbled
- 1/2 cup craisens
- 1 cup sunflower seeds
- 1/4-1/2 red onion
- Dressing:
- 1 cup mayonaise
- 1/2 cup sugar
- 2 tablespoons vinegar

Combine first five ingredients in large roasting pan (a disposable is just fine)
- 2 cans Beef Consomme
- 1/2 cups Lemon Juice
- 1-1/2 cup Soy Sauce
- 5 cloves Chopped Garlic
- 2 Tablespoons Liquid Smoke
- 10 pounds Beef Brisket

- 2 packages (1/4 ounce each) active dry yeast
- 1/2 cup warm 2% milk (110° to 115°)
- 6 cups all-purpose flour
- 1/3 cup sugar
- 2 teaspoons salt
- 1 cup cold butter, cubed
- 1-1/2 cups warm half-and-half cream (110° to 115°)
- 6 egg yolks, lightly beaten
- 1 can (21 ounces) cherry pie filling
- 2 (8 oz.) pkg. cream cheese
- 1 c. sugar
- 1 tsp. vanilla
- 1 egg, separated
- ICING:
- 2 tablespoons butter, softened
- 3 cups confectioners' sugar
- 1/4 teaspoon vanilla extract
- Dash salt
- 4 to 5 tablespoons half-and-half cream
