Chicken with Artichokes

Salt and pepper chicken pieces
- 8 whole Chicken Legs Or Thighs
- Salt And Pepper, to taste
- 3 Tablespoons Olive Oil
- 16 ounces, weight White Mushrooms, Sliced
- 5 whole Garlic Cloves, Minced
- 1/2 cups White Wine (more To Taste)
- 2 cups Chicken Broth (More As Needed)
- 1 whole 14.5 Ounce Can Artichoke Hearts, Drained , Rinsed, And Patted Dry
- 1 cup Heavy Cream
- Freshly Chopped Chives To Taste
- Freshly Grated Parmesan
- 16 ounces, weight Pasta - Cooked And Drained
Cornmeal Pancakes (with berry syrup)

These pancakes are a cross between regular and cornmeal, and easy to make berry syrup
- Pancakes:
- 1-1/2 Cup (scant) organic white whole wheat flour
- 1 1/2 cup (heaping) organic cornmeal
- 1/2 tsp Salt
- 3 Tablespoons Baking Powder
- 4 Tablespoons Sugar
- 2-1/4 Cups of Coconut Milk (more if needed)
- 2 whole eggs
- 3 tesaspoons of vanilla
- 1/4 cup organic coconut oil, melted
- Blackberry Syrup:
- 1 pint of berries (blackberry or raspberry)
- 1 cup organic cane sugar
- 1/2 cup water
- 2 Tablespoons cornstarch
- Extra butter for serving
- Maple or Pancake syrup for serving (optional)

- 3 cups confectioners' sugar, sifted
- 1 tablespoon freshly grated orange zest
- 2 tablespoons freshly grated ginger
- Pinch of salt

- 1 tablespoon minced garlic
- 2 cups chicken stock
- 1 sprig rosemary
- 1 cup heavy cream
- 1/4 cup cornmeal
- 1/4 cup granulated sugar
- Kosher salt and freshly ground pepper
Chile Verde

Marinate the pork butt in the oil, garlic, cumin and salt for at least an hour
- marinate pork
- 2 lbs fatty pork butt cut into large chunks (2″+)
- 1 Tbs olive oil
- 1 Tbs kosher salt
- 2 cloves garlic minced
- 1 tsp cumin
- roast
- 2 Anaheim chilies cut in half lengthwise
- 4 Serrano chilies
- 1.5 lbs tomatillos scored so they don’t pop
- 4 large cloves garlic
- 1 large onion cut into 12 wedges
- for chile
- 2 C chicken broth
- 3 cilantro roots with about 5″ of stem attached
- 1 tsp dried oregano
- 1 cinnamon stick
- 1 tsp honey
- salt and pepper to taste
