- 1 1/2 teaspoons honey

- 1/2 cup unsweetened apple juice

- 2 teaspoons unsalted butter, softened
- 1/2 cup sugar
- 8 ounces semisweet chocolate, finely chopped
- 4 large egg whites
- 3 large egg yolks

- 1/4 cup heavy cream

- CAKE:
- 1 beaten egg
- 1/2 cup sugar
- 1/2 cup milk
- 2 Tbsp melted shortening
- 1 cup flour
- 2 tsp baking powder
- 1/2 tsp salt
- TOPPING:
- 1/4 cup Brown Sugar
- 1 tsp Cinnamon
- 1 TBSP Flour
- 1 TBSP Melted butter
- 1/2 Cup Toasted pecans, chopped

- Vegetable-oil cooking spray
- 2 cups cake flour (not self-rising), plus more for pan
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 1/2 sticks (12 tablespoons) unsalted butter, room temperature
- 1 1/3 cups sugar
- 3 large eggs
- 1 1/2 teaspoons pure vanilla extract
- 1 cup buttermilk
- 5 ounces semisweet chocolate, melted and cooled
- Coconut-Pecan Frosting
- 1 cup unsweetened shaved or flaked coconut, lightly toasted, for decorating
- 15 pecan halves, toasted, for decorating

Use this frosting on our Chocolate Cake
- 3 large egg yolks
- 1 can (12 ounces) evaporated milk
- 1 1/4 cups packed light-brown sugar
- 1 1/2 sticks (12 tablespoons) unsalted butter, cut into small pieces and brought to room temperature
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 2 2/3 cups (7 ounces) sweetened flaked coconut
- 1 1/2 cups (6 ounces) pecans, toasted and coarsely chopped
Roasted Corn Soup

Preheat oven to 450 degrees
- 6 Ears Corn, preferably not super sweet variaties, with husks intact
- 3 Large cloves of garlic, unpeeled
- 2 cups low sodium chicken broth
- 1 baking potato (about 1/2 pound), peeled, in 6 pieces
- 1 Tablespoon cornmeal
- 1/2 cup heavy cream
- salt and freshly ground black pepper
- pinch of sugar, optional

- •1 Tablespoon Minced Garlic
- •1 Tablespoon Onion Powder
- •1 teaspoon Seasoned Salt

- 1/2 cup granulated sugar
- 4 tablespoons (1/2 stick) unsalted butter, melted and cooled completely
- FOR FILLING:

- 2 tablespoons light rum
