Firecracker Chicken Meatballs

1. Position 2 racks near the center of the oven and preheat the oven to 475ºF
- Meatballs:
- 1 3/4 2 pounds ground chicken (or turkey)
- 4 teaspoons minced garlic
- 1 1/2 teaspoon salt
- 1 teaspoon pepper
- 2 large eggs
- 1 cup Panko breadcrumbs*
- 1/2 teaspoon paprika
- 1 teaspoon onion powder
- FIRECRACKER SAUCE:
- 1/2 cup hot sauce (I recommend Franks)
- 1 cup light brown sugar
- 2 tablespoons apple cider vinegar
- 1/4 teaspoon salt
- 1/4 1/2 teaspoon red pepper flakes (depending on spice preference)

Preheat oven to 400F. Combine all the ingredients for the Marinade together, whisk to combine well
- 2- 6 oz pieces of salmon
- 2 cloves garlic
- 3 tablespoons honey
- 3 teaspoons Dijon mustard
- 2 tablespoon Japanese cooking sake, optional
- Scant 1/8 teaspoon salt
- 3 dashes ground black pepper
- 1/8 teaspoon cayenne pepper
- Chopped parsley leaves, for garnishing
