Pork Tortilla Soup

This is a spin on my Chicken Tortilla soup
- 3-4 lbs. Pork Shoulder (butt), cut into small chunks
- 1 large Sweet Onion, chopped
- 1 Poblano (pasilla) pepper, seeded and chopped
- 1 can diced Tomatoes (preferably S & W diced w/garlic)
- 1 can Mexican stewed Tomatoes, chopped
- 1 can Black beans, rinsed
- 1 pkg. frozen white corn
- 7-8 cups Chicken broth
- 2 Avocadoes, diced
- 2 tblsp. Paprika
- 2 tblsp. Chili Powder
- 1 tblsp. Cumin
- 1 tsp. Oregano
- 1/2 tsp. cinnamon
- 1/2 tsp. Chipotle powder (or more if you want it spicy)
- 2 tblsp. Olive Oil
- 1/2 to 1 cup Heavy Cream
- Salt and Pepper
- Cheddar Cheese and Sour Cream for garnish
- Tortilla chips, crushed
Candied Yams

- 3 lbs. Sweet Potatoes or Yams
- 2 tsp. Vanilla extract
- 6 Tblsp. Butter
- 1/4 tsp. Salt
- 1 1/2 cups Sugar
- 1/4 cup Bourbon
- 1 tsp. Cinnamon
- 1 cup Orange juice
- 1 tsp. Nutmeg
Santa Fe Chicken Penne

Season chicken with salt, pepper, granulated onion and garlic
- 1 lb. Penne Pasta, cooked al dente (reserve 1/2 cup of pasta water)
- 4 boneless Chicken Breasts, cut into bite size pieces
- 1 Red Onion, sliced thin
- 4 Garlic cloves, minced
- Salt and Pepper to taste
- 1 can Mexican diced Tomatoes
- 1 tsp. Smoked Paprika
- 1 tsp. Granulated Onion
- 1 tsp. Granulated Garlic
- 1 pkg. frozen whole Green Beans
- 1/2 pkg. frozen Corn
- 1 container Philadelphia Santa Fe Cooking Cream
- 1/4 cup White Wine
- 1/2 cup Parmesan cheese, grated
Sage Rubbed Pork Tenderloin

Preheat oven to 400 degrees
- For the Pork:
- 2-3 lb. Pork Tenderloin
- Sea Salt and Fresh Ground Black Pepper, to taste
- 1/2 tsp. ground or rubbed Sage
- 1/2 tsp. granulated Garlic
- 1/2 tsp. granulated Onion
- For the Mushroom Sauce:
- 1 pkg. dried Shiitake mushrooms
- 6 to 8 baby Portabello mushrooms, sliced
- 2 Shallots, thinly sliced
- 1/2 stick Butter
- 2 cups of Heavy Cream
- 1/2 cup White Wine
- 1/2 tsp. Sage
- Sea Salt and Fresh Ground Black Pepper, to taste
Sausage Pizza Dip

This is my favorite appetizer to make for parties
- 1 Tblsp. Extra-virgin Olive Oil
- 1 cup Mozzarella cheese
- 3/4 lb. bulk Italian sweet or hot sausage
- 2/3 cup Parmigiano-Reggiano cheese
- Half of an Onion, finely chopped
- 2 pinches of dried Oregano
- 8 oz. Cream Cheese, softened
- 1 cup Tomato Sauce
- 1 loaf Semolina bread, sliced
- 2 Garlic cloves, minced
Salmon Log

Drain salmon and flake. Add all the ingredients except parsley and pecans and mix well
- 1 can Pink Salmon (I prefer Bumble Bee Wild Alaskan)
- 1 8oz block of Cream Cheese, softened
- 1/4 Onion, grated
- 1/2 tsp. Salt
- 1/4 tsp. granulated Garlic
- 1/2 tsp. Black Pepper
- 2 Tblsp. Lemon juice
- 1 tsp. Liquid Smoke
- 1 tblsp. Dried Parsley
- 1/4 cup chopped Pecans (optional)
Candied Sweet Potatoes

Cook unpared scrubbed sweet potatoes in boiling water 15 minutes
- 6 medium Sweet Potatoes
- 1/4 cup Butter
- 1/2 cup Dark Corn Syrup
- 2 Tblsp. Water
- 1/4 cup Brown Sugar, packed
Steak Bites with Bloody Mary Sauce

Heat a small saucepan over medium heat
- 1 Tblsp. Extra-virgin Olive Oil
- 1 cup Tomato Sauce
- 1 small Onion, finely chopped
- 1 rounded tblsp. Prepared Horseradish
- 1/2 cup Vodka Salt and Pepper to taste
- 2 Tblsp. Worcestershire 1 1/3 lb. Beef Sirloin, cut into 1 in. squares
- 2 tsp. Hot sauce Bamboo Skewers
- Steak Seasoning (such as McMormicks)
Last Minute Rolls

About 1 1/2 hour before dinner: Into scalded milk, in large bowl, stir sugar, salt, shortening; cool til lukewarm
- 1 1/4 cups Scalded Milk
- 2 1/2 Tblsp. Sugar
- 1 1/2 Tsp. Salt
- 1/4 cup Shortening
- 2 pkg. Active Dry Yeast
- 1/4 cup warm Water
- 3 1/4 cups Sifted Flour
Tomato Basil Elephant Ears

Preheat oven to 400 degrees
- 1 1/4 cups Sun-dried Tomatoes, chopped
- 3/4 cup Olive Oil
- 3 Tblsp. Chopped Garlic (9 cloves)
- 1 cup freshly grated Parmesan
- 5 cups Basil leaves, packed
- 1 sheet Puff Pastry, defrosted
- 1 tsp. Kosher Salt
- 1 Egg, mixed with 1 tblsp. water
- 1 tsp. Ground Black Pepper
