Sweet Potato Pie

Cream butter til soft, add sugar and salt and continue to cream until well blended
- 1 unbaked pie shell
- 1/4 tsp. Salt
- 1/2 cup Sugar
- 4 Tblsp. Butter
- 3 tblsp. Lemon Juice
- 1 cup Evaporated Milk
- 1 Tblsp. grated Lemon rind
- 3 Eggs, separated
- 1/4 tsp. Cinnamon
- 3 large Sweet Potatoes, cooked and mashed
Lemon Meringue Pie

Mix cold water with cornstarch to thin paste
- 1/2 cup Cold Water
- 7 Tblsp. Cornstarch
- 1 1/2 cup Hot Water
- 1 1/4 cup Sugar, plus 5 tblsp. for meringue
- 3 Eggs, separated
- 1 Lemon, juiced and zest
- 1 tblsp. Butter
- 1 baked Pie Shell
Chocolate Pie

Mix sugar, flour and cocoa
- 1 cup Sugar
- 3 Tblsp. Flour
- 2 Tblsp. Cocoa
- 1 to 2 Tlbsp. Milk
- 3 Egg Yolks
- 2 cups Milk
- 1 tsp. Vanilla
- 2 Tblsp. Butter
Chicken and Dumplings

No one can make dumplings like my mother, but I certainly try to get as close as I possibly can!
- 1 1/2 cups Flour
- 1/4 tsp. Crisco
- 1 Egg
- 1 small can evaporated milk
- Chicken base or boillion
- Large Hen
- Salt and Black Pepper to taste
Potato Pancakes

Peel potatoes and onion, grate and let stand about 10 minutes so moisture from potatoes will rise to the top
- 1 Egg
- 1 Onion
- 1 lb. Potatoes
- 2 tblsp. Flour
- 1/2 tsp. Salt
- 1/4 tsp. Pepper
- 2 tlbsp. Milk
- 1/2 tsp. Baking Powder

I took my mother's lemon meringue recipe and tweaked it a little
- 1/2 cup Cold Water
- 7 tblsp. Cornstarch
- 1 1/2 cups Hot Water
- 1 1/4 cups Sugar
- 3 Egg Yolk, beaten
- 1 Lemon, juiced and the zest
- 1 tblsp. Butter
- 1 8oz block of Cream Cheese, softened
- 1 cup Heavy Whipping Cream
- 2 capfuls Grand Mariner

- For Tomatillo Sauce:
- 1 (8oz) package Manicotti shells
- 2 Tblsp. Olive Oil
- 1 Sweet Onion, chopped
- 2 cloves Garlic, minced
- 1 Rotisserie Chicken, shredded
- Salt and Fresh ground Black Pepper
- 4 Roma Tomatoes, seeded and diced
- 3 Tblsp. chopped Cilantro
- 1/2 cup Sour Cream
- 1 lb Tomatillos, quartered
- 1 small Red Onion, quartered
- 1 Jalapeno, halved
- 2 Garlic cloves
- 2 Tblsp. Olive Oil
- Salt and Fresh ground Black Pepper
- For Cheese Sauce:
- 3 Tblsp. Butter
- 3 Tblsp. all-purpose Flour
- 2 cups grated Fontina Cheese
- 2 cups Heavy Cream, room temperature
- 1/4 tsp. Grated Nutmeg

- 1/2 cup Lime Juice
- Zest of 2 Limes

- 1 pound unsalted Butter
- 1 pound plus 12 ounces semisweet chocolate chips, divided
- 6 ounces unsweetened chocolate
- 6 Large Eggs
- 3 Tblsp. instant Coffee granules
- 2 Tblsp. pure Vanilla Extract
- 2 1/4 cup Sugar
- 1 1/4 cup Flour, divided
- 1 Tblsp. Baking Powder
- 1 tsp. Kosher Salt
- 3/4 cup smooth Peanut Butter
Beef Tenderloin Alfredo with Balsmic Glaze

My version of a dish at Olive Garden
- 2 lbs Beef Tenderloin, cut into medallions
- Steak Grill Seasoning to taste (I prefer McCormick's)
- 2 tblsp. Worchestershire
- 2 cloves Garlic, minced
- 2 tlbsp. Flour
- 1 pint Heavy Cream
- 1 cup Parmasean Cheese
- 1 stick Butter + 2 tblsp. cold
- 3/4 cup Balsamic vinegar
- 2 tblsp. Honey
- 1 lb. fetticine noodles
- 1/4 cup Sun-dried Tomatoes, julienned
- Black Pepper to taste
- 2 tblsp. Olive Oil
