Pecan Pie

Beat eggs with wire whisk or fork
- 4 eggs
- 1/4 tsp salt
- 1/4 C melted butter
- 1 1/4 C light corn syrup
- 1 1/4 C firm packed brown sugar
- 1 tsp vanilla
- 1 unbaked 9” pasty shell
- 1 C chopped pecans
Barbeque Shrimp with Linguine

Preheat oven to 450 °F. Place half the shrimp in a single layer in a pan
- Creole Seasoning:
- 3 1/2 – 4 # shrimp (heads/shells on)
- 4 1/2 tsp ground black pepper
- 4 1/2 tsp cracked black pepper
- 1 Tbsp Creole Seasoning (see below)
- 9 Tbsp Worcestershire sauce
- 1 Tbsp minced garlic
- 2 sticks butter
- Juice of 3 lemons
- 3 Tbsp water
- 8 oz linguine
- 1/3 C salt
- 1/4 C powdered garlic
- 1/4 C fresh ground pepper
- 2 tsp cayenne
- 2 tsp thyme
- 2 tsp oregano
- 1/3 tsp paprika
- 1 Tbsp powdered onion
- Mix in food processor. Makes about 2 cups.
Belgian Waffles

Make hole in center of dry ingredients
- Sift:
- 1 3/4 C flour
- Re-sift with:
- 2 tsp baking powder
- 1/2 tsp salt
- 1 Tbsp sugar
- Beat well:
- 3 egg yolks
- Add:
- 2 T melted butter
- 1 1/2 C milk
Artichokes

Trim and quarter artichokes and slowly boil them until tender
- Artichokes, trimmed and quartered
- Olive Oil
- Romano Cheese, grated
- Salt
- Pepper
- Garlic, finely chopped
- Parsley
Cinnamon Rolls

Pour tepid water into a bowl and sprinkle yeast and 1 tsp of sugar over it
- 3 - 3 1/2 C flour
- 1/4 oz package active dry yeast
- 1/4 C tepid water
- 1/2 about 1/2 C sugar
- 1/2 tsp salt
- 2 egg yolks
- 1 C tepid milk
- 6 Tbsp butter, melted
- 1 1/2 C light brown sugar
- 1/2 C light corn syrup
- 2 tsp ground cinnamon
- 1/2 C pecans, chopped
Chart House 1000 Island Dressing

Follow directions above. -The Chart House
- Blend by hand or low speed:
- 1 qt whole egg mayonnaise (no substitute)
- 1 C catsup
- Add the following and blend enough to mix:
- 1/2 medium red onion
- 4 stalks celery
- 4 sweet pickles
- 1/2 bell pepper
- 2 1/2 sprigs parsley
- 2 Tbsp pimento or canned red pepper
- 2 boiled eggs
Thai Beef with Peppers

Directions Cook the noodles according to the package directions
- 1 package pad Thai rice noodles or linguine
- 1/2 cup low-sodium soy sauce
- 3 tablespoons sherry
- 2 tablespoons cornstarch
- 2 tablespoons packed brown sugar
- 1 tablespoon minced fresh ginger
- 1 teaspoon red chili paste or a few dashes red chili oil
- 2 cloves garlic, minced
- 1 lime, halved
- 1 pound flank steak, sliced very thin against the grain
- 2 tablespoons vegetable oil
- 1 medium yellow onion, sliced
- 1 red bell pepper, cored and sliced into rings
- 1 tablespoon diced fresh jalapeno or 1 teaspoon diced hot pepper
- Fresh basil leaves, for garnish
- Fresh cilantro leaves, for garnish
Cheese/Garlic Grits

Butter a 2 qt casserole dish
- 3 C chicken broth
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/8 tsp garlic powder
- 1 C regular grits
- 8 oz cheddar cheese, cubed
- 1/4 C milk
- 2 large eggs, beaten
- 1/2 stick butter
- 4 oz grated sharp white cheddar
Salad - Pasta Salad

Cut the mozzarella into small pieces and place in a dish with the oregano, and the basil cut into thin slices
- gr. 340 pasta – Fusilli, Bowtie or Penne Rigate are always good but you can substitute whichever you like.
- 6 mature roma tomatoes
- 10 basil leaves
- 1 mozzarella - 'Fior di Latte'
- salt & pepper
- 1 tsp oregano
Sugared Pearl Onions

- 8 oz Pearl Onions, outer layer peeled
- 2 TBS Butter
- 2 TBS Water
- 1 tsp Salt
- 1/2 tsp Black Pepper
