Gazpacho with Olive Oil Croutons

1. Preheat oven to 350 degrees
- 2 large, ripe, juicy tomatoes, cored
- 1 shallot
- 2 Persian cucumbers, or 1 medium Kirby cucumber, seeded and peeled
- 1 stalk celery
- 1 red bell pepper, stemmed and seeded
- 1 1/2 cloves garlic
- 1 1/2 tablespoons rice vinegar
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper
- 1 teaspoon Worcestershire sauce, optional
- 1/2 cup olive oil, plus more for drizzling
- 3 cups roughly torn sourdough bread without crust
- 2 tablespoons roughly chopped basil leaves
Corn Dogs

Mix ingredients together and dip hot dogs in batter before frying in oil until brown
- 1 C flour
- 2 Tbsp sugar
- 1 1/2 tsp baking powder
- 1 beaten egg
- 1 tsp salt
- 2/3 C corn meal
- 3/4 C milk
- 1 # hot dog franks
Brownies

Melt stick of butter in small pan with the squares of chocolate placed on top of butter
- 2 sq chocolate
- 1 stick butter
- 1/2 C flour
- 1 C sugar
- 1 tsp vanilla
- 2 eggs

Break bread into small pieces
- 9 slices white bread
- 13 oz evaporated milk
- 1 tsp vanilla
- 1/3 C melted butter
- 1 1/4 C sugar
- 2 C milk
- 4 egg yolks
- 4 egg whites
Asparagus Tart

1. To make the asparagus tart, preheat the oven to 350°F
- 1 bunch asparagus, ends snapped off
- 1 bunch fresh spinch, (about 20 largish leaves), stems trimmed (optional)
- 4 tablespoons butter, melted
- 1 pound phyllo, thawed according to package directions
- 1 3/4 cups grated Gruyere
- 3 large eggs, lightly beaten
- 1 cup heavy cream
- 1/4 to 1/2 teaspoon freshly grated nutmeg
- Sea salt and freshly ground black pepper
Wine Braised Brisket With Carmelized Onions

Season brisket evenly on both sides with salt and pepper
- 5 # beef brisket
- 2 Tbsp salt
- 1 Tbsp fresh ground pepper
- 1 bottle of red wine
- 2 medium carrots, cut in 1” chunks
- 2 celery stalks, cut in 1” chunks
- 1 medium leek, whites only, cut in 1” chunks
- All purpose flour
- 6 Tbsp oil
- 10 garlic cloves, smashed
- 6 lg shallots, sliced thin
- 1 C dried apricots
- 6 sprigs fresh parsley
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 Tbsp tomato paste
- 2 qts + 1 1/2 C beef stock
- 1 C pearl onions
Caramel Ice Cream Pie

Spread on cookie sheet and bake in 350 °F oven for about 15 minutes or until brown
- Mix together:
- 1 stick oleo
- 1 C flour
- 1/4 C brown sugar
- 1/2 C pecans

- Salt

- 4 liter of water, very cold water
- 600 g.–beef meat with bones with little fat
Soup - Farro

This unusual soup has a very thick and creamy consistency
- 3 Tablespoons olive oil
- 7 ounces or 200 grams farro
- 7 ounces or 200 grams dried white beans, such as Cannelloni or Borlotti; dried beans need to be soaked overnight or at least 12 hours
- 1 cup each of roughly chopped onion, celery and carrot
- 3 cloves garlic, chopped
- 1 large can whole tomatoes
- Chopped fresh sage and fresh rosemary to taste
- salt and pepper to taste
Quick Crab Stew

Using a heavy saucepan, melt butter and saute onion until translucent
- 2 Tbsp butter
- 1 small onion
- 1 (10 3/4-ounce) can cream of potato soup
- 1 (10 3/4-ounce) can cream of celery soup
- 1 soup can milk
- 1 soup can half-and-half
- 1 # crab meat (I prefer using 2 # claw meat)
- 1/4 cup dry sherry
- salt and pepper
