Onion Casserole

Bring water to boil in saucepan; add rice and salt, stir, simmer for 5 min
- 5 c. water
- 1/2 c. white rice
- 1 tsp. salt
- 4 large Spanish (yellow) onions, chopped in 1/2 ” dice
- 1/4 c. butter (1/2 stick)
- 1 1/2 c. grated Swiss cheese (approx. 6 oz.)
- 2/3 c. milk
- salt and freshly ground pepper
- 1/4 c. grated Parmesan cheese
Appetizer - Crostini Toscani

Heat oil in a pan then add the onions, celery and carrots and allow to brown slightly
- 1 small white onion (chopped)
- 2 sticks of diced celery
- 1 sliced carrot
- 200 g chicken livers, cleaned well and placed in a shallow bowl with 1-2 T of vinegar for 15 minutes
- 6 anchovy fillets
- 1 tablespoon of salted capers
- 1/2 glass of vinsanto (a sweet Tuscan white wine)
- 1 T. butter
- 1/2 c. olive oil (as needed)
- 1 loaf of Italian bread sliced and toasted
Sweet Restaurant Coleslaw

Combine the coleslaw mix and onion in a large bowl
- 1 (16 ounce) bag coleslaw mix
- 2 tablespoons diced onion
- 2/3 cup creamy salad dressing (such as Miracle Whip™)
- 3 tablespoons vegetable oil
- 1/2 cup white sugar
- 1 tablespoon white vinegar
- 1/4 teaspoon salt
- 1/2 teaspoon poppy seeds
S'Mores Brownies

Position a rack in the lower third of the oven and heat oven to 325 degrees F
- Crust:
- 6 tablespoons unsalted butter, melted
- 1 1/2 cups crushed graham cracker crumbs
- 2 tablespoons sugar
- Pinch fine salt
- Brownie:
- 8 tablespoons (1 stick) unsalted butter
- 4 ounces unsweetened chocolate, chopped
- 1 cup packed light brown sugar
- 3/4 cup white sugar
- 1 1/2 teaspoons pure vanilla extract
- 1/2 teaspoon fine salt
- 4 large cold eggs
- 1 cup all-purpose flour
- Topping:
- 4 cups large marshmallows
Chicken Salad

Put first 5 ingredients in a bowl and mix
- 4 C chopped rotisserie chicken
- 1 stalk celery, chopped
- 1/4 C red onion, chopped
- 1 1/2 tsp chopped tarragon or dill
- 2 Tbsp parsley, chopped
- 1 C mayonnaise
- 2 tsp lemon juice
- 1 tsp Dijon mustard
- 2 tsp salt
- freshly ground black pepper
- (I also added almonds)
Lobster Mac 'n Cheese

Topping: 2 Tbsp melted butter 1 1/2 C Panko Sprinkle on top Bake 375 degrees for 30 minutes -Sally Smolenski
- Add cheese to milk and add:
- 6 Tbsp butter, melted
- 1/2 C flour
- Cook 2 minutes
- 1 qt milk, heated
- Pour hot milk in roux
- 6 C cheese (gruyere, swiss, white cheddar)
- 1 Tbsp salt (or less)
- 1 tsp pepper
- 1/2 tsp nutmeg
- Stir
- 1 # cooked posted in salted water
- Add pasta to milk and cheese plus:
- 1 1/2 # lobster, chopped
- Put all in buttered casserole.
Pasta Da Vinci - copycat

- Penne Pasta - Enough for 2 servings according to the package
- 1/4 Red Onion or 3 Shallots - Chopped
- 1/3 cup Button Mushrooms - quartered
- 1/4 cup Shiitake Mushrooms - quartered
- 1 tsp Garlic - chopped, not minced or crushed
- 1/2 lb Chicken Breast - Cut into bite-size pieces
- 3 Tbsp Butter
- 1 Tbsp Flour
- 1 tsp Salt
- 1 cup Madeira wine (red)
- 1/2 cup Water
- 2 Tbsp Heavy Cream
- 1 Tbsp Parsley

- 1 kg. of spinach
- 1 T. of olive oil
- 1 t. red pepper flakes or powder
- 3 cloves of garlic
Salsa Verde

Blend tomatillos in a blender or large food processor
- 2-3 pounds tomatillos, husked (I had a gallon-sized bag full of them, unhusked)
- 2 onions, coarsely chopped
- 4 cloves garlic
- 1 serrano pepper, seeded and sliced
- 1/2 bunch cilantro
- 3 (4.5 – 5 oz) cans chopped green chilis
- 1 Tbsp. green Tabasco sauce
- 1/2 c. vinegar
- 1 Tbsp. dried oregano
- 1 tsp. cumin
- 1 tsp salt (or to taste)
- 1 Tbsp. sugar
Dessert - Tiramisu

Place the yolks and sugar into a bowl and beat with a fork until you have a pale, foamy paste
- 500 g. mascarpone cheese
- 5 eggs separated
- 5 Tbs. sugar
- 300 g. Lady Finger biscuits (Pavesini)
- 100 gms chocolate bar
- 6 cup of espresso
- 1 pinch of salt
