  • 1 1/2 c. grated Swiss cheese (approx. 6 oz.)
  • 2/3 c. milk
  • salt and freshly ground pepper
  • 1/4 c. grated Parmesan cheese

  • 1 small white onion (chopped)
  • 2 sticks of diced celery
  • 1 sliced carrot

  • 6 anchovy fillets
  • 1 tablespoon of salted capers
  • 1/2 glass of vinsanto (a sweet Tuscan white wine)

  • 1/2 c. olive oil (as needed)
  • 1 loaf of Italian bread sliced and toasted

  • Add cheese to milk and add:
  • 6 Tbsp butter, melted
  • 1/2 C flour
  • Cook 2 minutes
  • 1 qt milk, heated
  • Pour hot milk in roux
  • 6 C cheese (gruyere, swiss, white cheddar)
  • 1 Tbsp salt (or less)
  • 1 tsp pepper
  • 1/2 tsp nutmeg
  • Stir
  • 1 # cooked posted in salted water
  • Add pasta to milk and cheese plus:
  • 1 1/2 # lobster, chopped
  • Put all in buttered casserole.
