- * 2 tablespoons olive oil
- * 1/2 pound thick-cut pancetta, cut into 3/4-inch cubes
- * 2 pounds frozen spinach , thawed and drained
- * 1 (15-ounce) container whole milk ricotta
- * 1 cup grated asiago cheese
- * 1/2 teaspoon freshly ground black pepper
- * 1/4 teaspoon freshly grated nutmeg
- Sauce:
- * 1 tablespoon butter
- * 1 garlic clove , minced
- * 1 cup cream
- * 2 cups grated asiago cheese, plus 1/4 cup
- * 1/4 cup chopped fresh parsley
- * 1/4 teaspoon freshly ground black pepper
Mushroom Lasagna

Preheat the oven to 375°F
- Kosher salt
- Good olive oil
- 3/4 pound dried lasagna noodles
- 4 cups whole milk
- 12 tablespoons (11/2 sticks) unsalted butter, divided
- 1/2 cup all-purpose flour
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground nutmeg
- 1 1/2 pounds portobello mushrooms
- 1 cup freshly ground Parmesan
Dessert - Zuppa dolce bicolore

Whip the egg yolks, sugar and cornstarch together and stir well
- 1/2 liter of milk
- 50 g cornstarch
- 4 egg yolks
- 100 g. sugar
- 100 g of white chocolate
- 100 g. fondue chocolate
- 125 g. whipping cream
- 2 c. Of Alchermes
- 300 g Ladyfinger
Secondo - Pork - Baked Pork with Scallions and Fennel

Preheat oven to 200°C Cook the scallions and fennel with oil
- 1 arista
- juice of1 orange
- fennel
- scallions
- salt & pepper
- 1 glass of white wine
- 1/2 cup olive oil
Baked Shrimp Scampi

Preheat the oven to 425°F
- 2 pounds (12 to 15 per pound) shrimp in the shell
- 3 tablespoons good olive oil
- 2 tablespoons dry white wine
- Kosher salt and freshly ground black pepper
- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 4 teaspoons minced garlic (4 cloves)
- 1/4 cup minced shallots
- 3 tablespoons minced fresh parsley leaves
- 1 teaspoon minced fresh rosemary leaves
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 extra-large egg yolk
- 2/3 cup panko (Japanese dried bread flakes)
- Lemon wedges, for serving
Potatoes - Punched

- 1 1/2 lb golf-ball sized Yukon Gold potatoes, pricked all over with a fork
- 1/2 C olive oil
- kosher salt
- 3 garlic cloves, thinly sliced
Risotto - Basic

Thinly slice the onion and sauté in the oil with 1 T of butter
- 320 g Arborio rice
- 1 white onion, small
- 2 T. butter
- 200 g. parmesan
- 2-3 liters beef /other stock (must be added to the rice hot)
- 1 c white wine (dry)
- 3 T. olive oil
Hot Bacon Dressing

Ideal over sliced tomatoes, mozzarella slices, fresh basil, crumbled bacon
- 3 tablespoons bacon fat
- 1 garlic clove, minced
- 3 tablespoons apple cider vinegar
- 2 teaspoons brown sugar
- 1 teaspoon dijon mustard
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 3 slices bacon, crumbled
Chicken Tettrazini

Boil chicken breasts, cool and cut into bite size pieces
- 4-5 Chicken Breasts
- 1 cup chopped celery
- 1 cup chopped onions
- 2 rounded cups grated cheddar cheese
- 1 can Cream of Mushroom Soup
- 1 can Cream of Chicken or Celery Soup
- Spaghetti
- 1 stick butter
- 1/4 - 1/2 cup flour
- 2 cups milk
