Pasta - Homemade Pasta - Base Recipe

Both fresh and dried pasta should be cooked al dente, tender but chewy
- 400 g. of flour
- 4 eggs
- 2 T. of white wine
- Pinch of salt
Panini - Ham, Provolone, Artichoke Hearts

Whisk 6 Tbsp olive oil, vinegar, oregano, garlic, salt/pepper in small bowl
- 1/2 C olive oil
- 2 Tbsp balsamic vinegar
- 2 Tbsp fresh oregano (or 1 Tbsp dried)
- 1 1/2 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 slices ciabatta bread
- 6 oz provolone
- 6 oz jar marinated artichoke hearts, drained
- 2 oz salami
Spinach Dip Mix

Combine all ingredients in a bowl
- 1 10-oz package frozen chopped spinach, thawed and squeezed dry
- 1 16-oz container sour cream
- 1 cup mayonnaise
- 1 8-oz package vegetable soup mix
- 1 8-oz can water chestnuts, drained and chopped
- 3 green onions, chopped (optional)
Bread Dipping Blend

Combine all ingredients except olive oil and lemon juice in food process or spice grinder
- 1 Tbsp fresh basil, minced
- 1 Tbsp fresh parsley, chopped
- 1 Tbsp garlic, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp black pepper (fresh ground)
- 1/2 tsp fresh rosemary, minced
- 1/2 tsp kosher salt
- 1/4 tsp crushed red pepper
- 1/2 tsp olive oil
- 1/8 tsp fresh lemon juice
Roasted Potato Salad

Preheat oven to 400 °F. In mixing bowl, toss potatoes with 2 Tbsp of olive oil
- 2# new potatoes, quartered
- 1 C plus 2 Tbsp olive oil
- salt
- fresh ground black pepper
- 1 egg
- juice of 3 lemons
- 1 Tbsp chopped garlic
- 1 Tbsp creole mustard
- 1/2 C chopped green onions
- 1/2# bacon, chopped and browned until crispy
- 1 C chopped red onions
- 4 hard-boiled eggs, peeled and sliced
- 1 Tbsp fine chopped parsley leaves
- 1 Tbsp fine chopped fresh dill
Mushroom Swiss Slider

In a small bowl, mix mayonnaise, ketchup, and cayenne
- 1/3 cup Mayonnaise
- 2 Tablespoons Ketchup
- 1 teaspoon Cayenne Pepper (less If You're Sensitive To Spice!)
- 4 Tablespoons Butter
- 1/2 whole Medium Onion, Finely Diced
- 8 ounces, weight White Mushrooms, Chopped Finely
- 1/2 cup White Or Red Wine (optional)
- 4 dashes Worcestershire Sauce
- Kosher Salt And Freshly Ground Black Pepper
- 2 pounds Ground Beef
- 4 Tablespoons Heavy Whipping Cream
- 4 dashes Worcestershire Sauce
- 1 teaspoon Kosher Salt
- Freshly Ground Black Pepper
- 4 slices Swiss Cheese, Cut Into Four Squares
