Fall is here! Sounds like it is time for a good pumpkin pie

  • Roasting Fresh Pumpkin
  • This is easier than it sounds! Cut the pumpkin in half, scoop out the seeds (don't discard, you can roast them for a great snack! Sprinkle little salt & paprika on them!)
  • Put pumpkin halves on a cookie sheet face down and bake in hot oven (400) for about 40 minutes, best thing is to eyeball it, if you can stick a fork into it easily it's done.
  • Set aside and let cool, once cool scoop out insides and pop into food processor until you get a nice smooth texture.
  • Pie Filling
  • 3 large eggs, lightly beaten
  • 1.5 tsp cinnamon
  • 3/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • 1/8 tsp salt
  • 1.5 cups heavy cream
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
