Fall is here! Sounds like it is time for a good pumpkin pie
- Roasting Fresh Pumpkin
- This is easier than it sounds! Cut the pumpkin in half, scoop out the seeds (don't discard, you can roast them for a great snack! Sprinkle little salt & paprika on them!)
- Put pumpkin halves on a cookie sheet face down and bake in hot oven (400) for about 40 minutes, best thing is to eyeball it, if you can stick a fork into it easily it's done.
- Set aside and let cool, once cool scoop out insides and pop into food processor until you get a nice smooth texture.
- Pie Filling
- 3 large eggs, lightly beaten
- 1.5 tsp cinnamon
- 3/4 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- 1/8 tsp salt
- 1.5 cups heavy cream
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 . cups pumpkin puree
FRIED CHICKEN
