Fudge and Cream Pudding Cake

Coat inside of 4-quart slow cooker with butter
- 2 T. unsalted buttter
- 1 cup flour
- 3/4 cup packed light brown sugar
- 5 T. unsweetened cocoa powder, divided
- 2 tsp. baking powder
- 1/2 tsp ground cinnamon
- 1/8 tsp. salt
- 1 cup light cream
- 1 T. vegetable oil
- 1 tsp. vanilla
- 3/4 cup packed dark brown sugar
- 1-3/4 cups hot water
- Whipped cream or ice cream
Strawberry Banana Crepes

In a large bowl, combine the flour, sugar, cinnamon, milk and eggs
- FILLING:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon ground cinnamon
- 1-1/2 cups milk
- 2 eggs
- 1 to 2 tablespoons butter
- 1 package (8 ounces) cream cheese, softened
- 1 carton (8 ounces) frozen whipped topping, thawed
- 1/2 cup confectioners' sugar
- TOPPING:
- 2 cups sliced fresh strawberries
- 2 medium firm bananas, sliced
- 1/4 cup sugar, optional
Turkey Cheese Ball

In a small bowl, beat the first six ingredients until combined
- DECORATIONS:
- 2 packages (8 ounces each) reduced-fat cream cheese
- 6 ounces deli smoked turkey, finely chopped
- 1 cup (4 ounces) shredded cheddar cheese
- 1 tablespoon finely chopped onion
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 3 packages (3 ounces each) cream cheese, softened
- 2 tablespoons milk
- Brown, orange and yellow paste food coloring
- 6 large oval crackers
- 1 large sweet red pepper
- 1 small yellow summer squash
- 1 cup pecan halves
- Assorted crackers
Berry Bread with Spread

For strawberry spread, in a small bowl, beat the cream cheese until smooth
- 1 package (8 ounces) cream cheese, softened
- 2 packages (10 ounces each) frozen sweetened sliced strawberries, thawed
- 3 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 4 eggs
- 1 cup canola oil
- 1 jar (3 ounces) macadamia nuts, chopped
Au Gratin Potatoes and Ham

In 3 1/2- to 4-quart slow cooker, layer half each of the potatoes, onion, ham and cheese; repeat layers
- 6 cups (6 medium) sliced peeled potatoes
- 1 medium onion, coarsely chopped (1/2 cup)
- 1 1/2 cups cubed cooked ham
- 1 cup shredded American cheese (4 oz)
- 1 can (10 3/4 oz) condensed cream of mushroom soup
- 1/2 cup milk
- 1/4 to 1/2 teaspoon dried thyme leaves
Cantaloupe and Chicken Salad

Mix yogurt and mayonnaise in large bowl
- 1/4 cup plain yogurt
- 1/4 cup mayonnaise or salad dressing
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh chives
- 1/4 teaspoon salt
- 5 cups 1 1/2-inch pieces cantaloupe
- 2 1/2 cups cut-up cooked chicken
- 1 cup red or green grapes, cut in half
- 1 medium cucumber, cut into strips
Meatball Lasagna

Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- 1 jar (26 oz) tomato pasta sauce (any variety)
- 1 can (14.5 oz) diced tomatoes with Italian herbs, undrained
- 1 box (12 oz) frozen Italian-style meatballs, thawed, each cut in half
- 1 1/2 cups frozen bell pepper and onion stir-fry (from 1-lb bag), thawed, drained
- 1 container (15 oz) ricotta cheese
- 1 egg, beaten
- 2 tablespoons chopped fresh basil leaves
- 8 uncooked lasagna noodles
- 3 cups shredded mozzarella cheese (12 oz)
- 1/4 cup shredded Parmesan cheese (1 oz)
