TURKEY ENCHILADAS

Heat butter in saucepan, and saute onion and garlic until soft Add next seven ingredients and simmer 20 minutes
- 1 T butter or oil
- 1 c chopped red onion
- 1 clove minced garlic
- 1 16oz can tomatoes, with liquid, chopped
- 1 8oz can tomato sauce
- 1/4 c chopped green chilis or 1 fresh jalapeno chili, chopped
- 1 t ground cumin
- 1/2 t oregano
- 1/2 t chili powder
- 12 corn tortillas
- 2 c shredded cooked turkey
- 2 c grated Monterey jack cheese
- 1 c sour cream
- 1 avocado, sliced
BAKED PENNE WITH MEAT SAUCE

- 8 oz dried penne
- 1 (14oz) can whole Italian-style tomatoes
- 1/2 of 1 (6oz) can (1/3c) Italian-style tomato paste
- 1/4 c dry red wine or tomato juice
- 1/2 t sugar
- 1/2 t dried oregano, crushed or 2 t snipped fresh oregano
- 1/4 t black pepper
- 1 # lean ground beef
- 1/2 c chopped onion
- 1/2 c slice pitted ripe olives
- 1/2 c shredded reduced-fat mozzarella cheese (2oz)
GREEN BEANS WITH DRIED CRANBERRIES

Steam green beans in 3/4 inch boiling water until tender, about 6 minutes
- 1 1/2 pounds green beans

- 1/2 c dried cranberries

CHICKEN MARSALA

1. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano
- 1/4 c flour for coating
- 1/2 t salt
- 1/4 t black pepper
- 1/2 t dried oregano
- 4 skinless, boneless chicken breast halves - pounded 1/4 inch thick
- 4 T butter
- 4 T olive oil
- 1 c sliced mushrooms
- 1/2 c Marsala wine
- 1/4 c cooking sherry
HULI HULI CHICKEN

1. Place the chicken thighs in a gallon-sized Ziplock bag 2
- 2# boneless skinless chicken thighs (about 6 pieces)
- 1/2 c pineapple juice
- 1/4 c soy sauce
- 1/4 ketchup
- 6 T brown sugar
- 3 T chicken broth
- 2 cloves garlic minced
- 1 t fresh ginger, grated or minced
- 1/4 t dry ground mustard
- Thinly sliced green onions for garnish - optional
BAKED BURRITOS WITH CHICKEN AND BEANS

- 2 1/2 c roasted chicken, shredded
- 1/4 c green onions, thinly sliced
- 2-3 T fresh cilantro, chopped
- 2 medium tomatoes, diced
- 1/4 t diced green chilies, drained (4 1/2 oz)
- 6 flour tortillas
- 1 can fat-free refried pinto or black beans (low sodium, preferred) (16oz)
- 1 c shredded cheddar or Mexican cheese blend
- Grapeseed oil
- Salsa and avocado for serving

TANGY MUSTARD MARINADE
