ROASTED GREEN BEANS WITH WARM VINAIGRETTE

1. Preheat oven to 375 degrees
- 1 # green beans, trimmed
- 1 shallot, peeled and cut into slicies keeping the root end intact
- 2 cloves garlic, smashed
- 1/4 c olive oil (plus 1 T)
- 3 T sherry vinegar
- 1/4 c dried cranberries
- 1/4 c slivered almonds, roasted for garnish
- Kosher salt and freshly ground black pepper
NAPA CABBAGE SLAW WITH TOASTED ALMONDS

- Salad
- 1/3 c raw almonds, toasted and roughly chopped
- (To toast almonds, place whole almonds in a baking pan and toast in a 300-325 degree oven for 10-15 minutes, until the color begins to darken and they give off a rich nutty aroma.)
- 1/2 Napa cabbage, shredded or thinly sliced (4c)
- 2 scallions, chopped fine
- 1/4 c chopped cilantro
- Dressing
- 2 T lime juice
- 2 T rice vinegar
- 1 t tamari
- 1 T sugar
- 3 T olive oil
- 2 t toasted sesame oil
- 1/2 t sea salt
REFRIGERATOR DILL PICKLES

Stir water, vinegar, sugar and sea salt together in a saucepan over high heat
- 3 1/2 c water
- 1 1/4 c white vinegar
- 1 T sugar
- 1 T sea salt
- 4 c cucumber spears or slices
- 2 cloves garlic, whole
- 2 heads fresh dill
SAUTEED CHICKEN BREASTS WITH BRANDY CREAM SAUCE

- 1/4 c butter or margarine
- 4 chicken-breast halves, boned and skinned
- 2 T chopped fresh basil or 2 t dried
- 2 large ripe tomatoes, halved
- 1/3 c brandy
- 1/4 c heavy cream
- 1/2 t salt
- Fresh basil for garnish
PARMESAN CHICKEN CUTLETS
