CREAMY CUCUMBER AVOCADO SALAD DRESSING
By Clarabell
Puree all ingredients with 3/4 c water in a food processor until smooth
- 2 garlic cloves, minced
- 1/2 English cucumber
- 1 avocado, pitted and peeled
- 1 c baby spinach
- 1/2 c fresh mint leaves
- 2 spring onions or green onions
- Fresh juice of 1 lemon
- 2 T olive oil
- 1/2 t freshly ground white pepper
- 1 t sea salt
PESTO SAUCE

Add the garlic to the food processor and mince
- 3 cloves garlic
- 2 c fresh basil leaves
- 3 T pine nuts
- 1 dash salt and pepper
- 1/2 c extra virgin olive oil
- 1/2 c Parmesan cheese grated
TURKEY ENCHILADAS

Heat butter in saucepan and sauté onion and garlic
- 1 T butter or oil
- 1 c chopped red onion
- 1 clove garlic, minced
- 1 16oz canned tomatoes w/ liquid chopped
- 1 8oz can tomato sauce
- 1/4 c chopped green chiles
- 1 t ground cumin
- Salt to taste
- 1/2 t oregano
- 1/2 t chili powder
- 12 corn tortillas
- 2 c shredded cooked turkey
- 3 c grated Monterey Jack cheese
- 1 c sour cream
LEMON CREAM SAUCE FOR FISH

Dust fish in flour, salt and pepper
- TO SAUTE FISH:
- 2 T butter
- 1/2 t salt
- 1/4 t pepper
- 1/4 c flour
- SAUCE:
- 3/4 c cream
- zest of 1/2 lemon
- 1 T lemon juice
- 2 T parsley
- 1/4 t salt

In large skillet, cook beef, onion, carrot, zucchini, and garlic over medium-high heat for 10 minutes, or till beef...
- 1 lb extra-lean ground beef
- 2/3 c chopped onion
- 1 medium carrot, chopped
- 2 oz zucchini, finely chopped
- 1 medium garlic clove, minced
- 1 14.5 oz can no-salt-added whole tomatoes, drained and chopped (I used diced.)
- 1 8 oz can no-salt-added tomato sauce
- 1 T firmly packed light brown sugar
- 2 t chili powder
- 2 t Worcestershire sauce
- 1 t dry mustard
- 1/8 t salt
- 1/8 t pepper
- 4 7-inch whole-wheat pita pockets
SEARED AHI TUNA

Mix balsamic vinegar, garlic, soy sauce, ginger, green onion, and lemon juice in a large bowl
- 2 lbs Ahi Tuna Steak
- 2 T balsamic vinegar
- 2 T soy sauce
- 1 T lemon juice
- 1 garlic clove
- 3 T ginger, grated
- 1 green onion, chopped
CHICKEN CACCIATORE

1. Put the chopped onion in a saucepan
- 1 onion, chopped
- 1 c canned tomatoes
- 1/2 c tomato sauce
- 1/8 t garlic powder
- 1 t oregano
- 1/8 t pepper
- 4 chicken pieces, skin removed (breasts, thighs, or legs)
CRANBERRY PORK ROAST

Cut roast in half and place in a slow cooker; sprinkle with salt and pepper
- 1 boneless rolled pork loin roast (2 1/2 to 3 pounds)
- 1/2 t salt
- 1/4 t pepper
- 1 can (16 oz) whole-berry cranberry sauce
- 1/4 c honey – less if want less sweet
- 1 t grated orange peel
- 1/8 t ground cloves
- 1/8 t ground nutmeg
MARINATED GRILLED PORK TENDERLOIN

Trim the tenderloins of all fat and silver skin
- 3 (3/4 to 1 pound) pork tenderloins
- 1/2 c soy sauce
- 1/2 c dry sherry
- 1/2 c honey
- 1/4 c rice wine vinegar
- 1/4 c vegetable oil
- 2 T fresh orange juice
- 1 1/2 T minced fresh rosemary
- 1 T minced shallots
- 1 t minced fresh ginger
BALSAMIC GLAZED HALIBUT

In a bowl, mix vinegar, brown sugar, and mustard
- 2 T balsamic vinegar
- 1 t firmly packed brown sugar
- 1 t Dijon mustard
- 2 pieces halibut
- 1/2 t olive oil
- Salt and pepper
