DRY RUB FOR CHICKEN

1. Prepare grill. 2. Combine first 9 ingredients in a bowl, stirring well
- 1 t sugar
- 1 t chili powder
- 2 t olive oil
- 1/2 t salt
- 1/4 t garlic powder
- 1/4 t ground cumin
- 1/8 t ground ginger
- 1/8 t ground cinnamon
- 1/8 t freshly ground black pepper
- 2 (8oz) bone-in chicken breasts halves
- Cooking spray
SAUSAGE AND SWEET POTATO SMASH

Bring a large pot of salted water to a boil
- 4 large sweet potatoes, peeled and quartered
- 1-pound package sausage meat
- 1 large yellow onion, chopped
- 1 T fresh thyme leaves
- Salt and ground black pepper, to taste
GRILLED LEMON-SOY SALMON

Combine the first 6 ingredients in a large zip-top plastic bag
- 3 T dry white wine
- 3 T fresh lemon juice
- 1 1/2 T soy sauce
- 1/2 t salt
- 1 1/2 t olive oil
- 1 garlic clove, minced
- 4 (6 oz.) salmon fillets (about 1” thick)
- Cooking spray
- Sliced green onions (optional)
SHINGLED ROASTED POTATOES

Preheat oven to 435 degrees
- 6 russet potatoes
- 2 T olive oil
- Salt
ROASTED TURKEY BREAST

4 points - 3 ounces of turkey
- 1 spray cooking spray
- 1 medium uncooked onion, red or yellow, sliced
- 1/2 c reduced-sodium chicken broth
- 2 pounds uncooked boneless, skinless turkey breast, a whole roast or breast tenderloin
- 1/2 t salt
- 1/2 t pepper
- 1/2 c hoisin sauce
ROASTED SALMON WITH HERBED YOGURT

1. Preheat oven to 450 degrees
- 1/2 c Greek yogurt (2%)
- 2 T Dijon mustard
- 2 T finely chopped fresh dill plus sprigs for serving
- 2 T finely chopped fresh parsley
- Coarse salt and ground pepper
- 1 side salmon (3# or 8 fillets (8oz each)
- Lemon wedges for serving
WW CAULIFLOWER AU GRATIN

- 1 head cauliflower, broken into pieces
- 1 (14oz) can Italian-style dice tomatoes
- 1 T butter
- 1/4 c milk
- 2 T flour
- salt, to taste
- pepper, to taste
- oregano, to taste
- 3 T seasoned bread crumbs
- 3 T parmesan cheese
TEXAS SHEET CAKE FROM NANA

Bring to a boil margarine, water and coco
- 2 sticks of margarine
- 1 cup water
- 4 Tablespoons of coco
- 2 cups sugar
- 2 cups flour
- ½ teaspoon salt
- 1 teaspoon soda
- 1 teaspoon vanilla
- 2 eggs
- ½ cup sour milk or cream
HAMBURGER BARLEY VEGETABLE SOUP

In 5 quart Dutch oven, brown ground beef; drain and stir in remaining ingredients
- 1 1/2 # ground beef
- 7 cups of water
- 5 beef-flavored bouillon cubes
- 2 c sliced carrots
- 1 1/2 c chopped onions
- 1 1/2 c chopped celery
- 1/2 c chopped green pepper
- 1/3 c barley
- 1 t salt
- 1 t pepper
- 2 bay leaves
- 1/4 c catsup
- 28 oz can diced tomatoes, undrained
- 8 oz can tomato sauce
YUMMY BOK CHOY SALAD

1. In a glass jar with a lid, mix together olive oil, white vinegar, sugar, and soy sauce
- 1/2 c olive oil
- 1/4 c white vinegar
- 1/3 c white sugar
- 3 T soy sauce
- 2 bunches baby bok choy, cleaned and sliced
- 1 bunch green onions, chopped
- 1/8 c slivered almonds, toasted
- 1/2 c (6 oz) package chow mein noodles
