GAME DAY SLOW COOKER CHICKEN

1. Put chicken in slow cooker
- 4 chicken breasts
- 1 pkg taco seasoning
- 1 can Rotel diced tomatoes
CRANBERRY BAKED CHICKEN

1. Preheat oven to 350 degrees
- 1 cut-up whole chicken
- 1 14-oz can cranberry sauce
- 1 pkg dry Lipton onion soup mix
- 1 8-oz bottle of French dressing
PUMPKIN SOUP

- 1 28oz can plain pumpkin
- 4 c low sodium chicken broth
- 1 1/2 c salsa
- 1 t salt
- 1/2 t pepper
THREE MUSHROOM SAUTE

In a skillet set over moderate heat cook the scallion in the oil, stirring, for 2 -3 minutes or until softened
- 1 c minced scallion, including green
- 3 T olive oil
- 1/4 pound each Shitake, cultivated and Oyster mushrooms, trimmed and sliced
- Salt and pepper
- 2 cloves garlic, minced
- 1/3 c dry white wine
- 1 c beef stock or canned broth
- 1 T tomato paste
- 1/2 c heavy cream, if desired
- 2 T minced fresh herbs, such a tarragon, chives, chervil or parsley
BAKED SALMON WITH FRESH CITRUS

1. Preheat oven to 425 degrees
- One 13 oz salmon fillet
- 1 lime
- 1 lemon
- 1 orange
- 3 T honey
- 1 T minced fresh ginger
CRANBERRIES GRAND MARNIER

1. Combine 2 c sugar and water in a large saucepan
- 2 c sugar
- 1 (1#) bag fresh cranberries
- 2 c water
- 4 T Grand Marnier (to taste)
- 1 T grated orange rind
- 1 T fresh lemon juice
- 2 T sugar
SPICY BEEF TACOS

- 1/2 t canola oil
- 2 garlic cloves, minced
- 3/4 pound gr beef
- 1 1/2 c canned diced tomatoes with jalapenos or green chilies
- 1 1/2 t gr cumin
- 1 1/2 t gr coriander
- 1/4 t salt
- 8 corn tortillas, warmed
- 2 c lightly packed thinly sliced romaine or iceberg lettuce
- 1/2 c shredded reduced-fat sharp Cheddar cheese
- 1/3 c fat free salsa
BAKED ZITI WITH TURKEY SAUSAGE

- 1 medium uncooked onion, chopped
- 1 medium green pepper, chopped
- 28 oz canned diced tomatoes
- 10 oz frozen green peas, thawed
- 2 T canned tomato paste
- 1 t dried oregano
- 1 t dried basil
- 1/2 t dried thyme
- 1/2 t fennel seed
- 1/2 t salt
- 1/2 t black pepper
- 12 oz uncooked whole-wheat pasta ziti, cooked according to package directions
- 6 oz shredded part-skim mozzarella cheese
Wood Ranch BBQ & Grill Peanut Coleslaw

1. In a large mixing bowl, combine coleslaw, red cabbage, celery and green onions
- 1 (16 ounce) cabbage and carrot coleslaw mix, packaged, shredded
- 1 1/2 cups red cabbage, packaged, shredded
- 3/4 cup celery, finely sliced
- 1/3 cup green onion, finely chopped
- 1/3 cup red wine vinegar
- 1 tablespoon water
- 1 1/2 tablespoon sugar
- 1/2 teaspoon seasoning salt
- 1/4-1/2 teaspoon garlic powder
- 1/3 cup vegetable oil
- 1 cup unsalted peanuts
