- 1 1/2 LB. GROUND BEEF
- 6 CUPS WATER

- 1 1/2 CUPS COARSELY CHOPPED ONIONS

KATHY'S CHICKEN TORTILLA SOUP

- 4 TSP CILANTRO (DRIED OKAY)
- 2 CANS CHICKEN BROTH (14 1/2 OZ) - I USE A BOX OF 30 OUNCES
- 1 CAN TOMATO SAUCE (15 OZ)
- 1 CAN MEXICAN STYLE STEWED TOMATOES (15 OZ) – I cut these up a little to make smaller pieces.
- 1 PKG TACO SEASONING
- 1 TBSP WORCESTERSHIRE SAUCE
- 2 -3 SKINLESS CHICKEN BREASTS – Can be added frozen
- 28 TORTILLA CHIPS
CHOCOLATE CREAM CHEES FUDGE

Gradually add sugar to softened cream cheese, mixing well after each addition
- 4c sifted powered sugar
- 1 (8oz.) cream cheese
- 4 (1oz) sq unsweetened chocolate, melted
- 1/2 c nuts (optional)
- 1 t vanilla

CHUNKY GAZPACHO WITH AVOCADO AND SHRIMP

1/2 c soup & one shrimp = 2SP
- 2 large heirloom tomatoes, cored
- 1 medium English (seedless) cucumber, peeled and halved lengthwise
- 1 large red bell pepper
- 16 oz tomato juice or vegetable juice such as V8
- 1 medium shallot, minced
- 1 T extra-virgin olive oil
- 1 T sherry vinegar
- 2 T chopped fresh dill, plus extra for garnish
- 1 1/2 t Kosher salt
- 1/2 medium avocado, cur into 8 chunks
- 8 large peeled, cooked shrimp
- 1 medium lemon, cut into 8 wedges
BOURBON CHICKEN

Combine olive oil and next 8 ingredients
- 1-1/2 pounds chicken breasts halves, boneless and skinless
- 2 T olive oil
- 2 T Dijon mustard
- 1/4 c bourbon whiskey
- 2 T red wine vinegar
- 2 T Worcestershire sauce
- 2 T soy sauce
- 1/4 c brown sugar
- 2 garlic cloves, minced
- Sea salt
- Black pepper
SLOW-COOKED ORANGE CHICKEN

Combine the first nine ingredients in a slow cooker
- 1 broiler-fryer chicken (3#), cut up and skin removed
- 3 c orange juice
- 1 c chopped celery
- 1 c chopped green pepper
- 1 can (4 ounces) mushroom stems and pieces, drained
- 4 t dried minced onion
- 1 T minced fresh parsley or 1 t dried parsley flakes
- 1/2 t salt
- 1/4 t pepper
- 3 T cornstarch
- 3 T cold water
- Hot cooked rice
