HALIBUT WITH BALSAMIC GLAZE

Whisk vinegar, honey, oil, and garlic in a bowl
- 1/2 c balsamic vinegar
- 2-3 T honey
- 3 T olive oil
- 2 garlic closes, minced
- 4 (6oz) halibut fillets
- Nonstick cooking spray
CHRISTMAS BRUNCH CASSEROLE

1. Place bacon in a large skillet
- 1 pound bacon
- 2 onions, chopped
- 2 c fresh sliced mushrooms
- 1 T butter
- 4 c frozen hash brown potatoes, thawed
- 1 t salt
- 1/4 t garlic salt
- 1/2 t ground black pepper
- 4 eggs
- 1 1/2 c milk
- 1 pinch dried parsley
- 1 c shredded Cheddar cheese
CHICKEN MARSALA

- 3 c fresh mushrooms, fresh sliced
- 1 # uncooked boneless skinless chicken breasts, four 4 oz pieces
- 1 t dried thyme
- 1/2 t salt
- 1/4 t pepper
- 1/2 c table wine, Marsala variety
- 1 1/4 c canned beef broth, reduced-sodium, divided
- 1 1/2 T cornstarch
DOROTHY’S SWEET POTATOES

Boil the water in a large pot and drop in the sweet potato slices
- 6 c water
- 2 pounds sweet potatoes, peeled and cut lengthwise into half-inch slices
- 1/2 c honey mustard
- 2 T olive oil
- 2 T melted butter
- 1 T minced fresh rosemary leaves
- Salt and pepper
SOY-LIME PORK TENDERLOIN

- 2 T fresh lime juice
- 1/3 c each rice wine vinegar and soy sauce
- 4 chopped garlic cloves
- 2 T canola oil
- 1 1/4 # pork tenderloin
GRATED RAW BEET SALAD

1. Peel the beets with a vegetable peeler, and grate in a food processor fitted with the shredding blade
- 1/2 lb beets
- 3 T freshly squeezed orange juice
- 1 T freshly squeezed lemon juice
- 1 T extra virgin olive oil
- 2 T minced chives, mint or parsley (or a combination)
- Salt to taste
- Leaves of 1 romaine lettuce
SPAGHETTI SQUASH W/FETA, ARUGULA, & PINE NUTS

Preheat oven to 400 degrees
- 3 # spaghetti squash, halved and seeded
- 1 large bunch arugula, washed and chopped
- 1 clove garlic, minced
- 1 T extra virgin olive oil
- 4 oz Feta, crumbled or cut into cubes
- 3 T pine nuts
- Sea salt and black pepper to taste
HOT SPICED CIDER

Put cider and sugar in slow cooker, stir until sugar dissolves
- 1 half gallon apple cider
- 1/2 c brown sugar
- 1 t whole allspice
- 1 t whole cloves
- 2 cinnamon sticks
- orange slices
HONEY-MUSTARD CHICKEN

Pat the chicken breasts dry, then season with salt and pepper
- 6 4oz boneless, skinless chicken breasts
- Kosher salt
- Black pepper
- 1 T canola oil
- 1 T unsalted butter
- 1/3 c honey
- 2 T Dijon mustard
- 1 T all-purpose flour
- 1.3 c fat free, low-sodium chicken broth
OVEN BAKED ONION RINGS

Preheat oven to 450 degrees Spray a baking sheet slightly with oil and set aside
- Cooking spray
- 4 c baked potato chips
- 1/2 t cayenne
- 1 c lowfat buttermilk
- 1/2 c plus 2 T all-purpose flour
- 1/2 t salt
- 1/4 t fresh ground black pepper
- 1 to 2 large Vidalia onions. peeled
