BOURBON MARINADE
By Clarabell
Mix together. Use as a marinade for beef
- 1/2 c olive oil
- 1/2 c soy sauce
- 1/2 c bourbon
- 2 small onions – thinly sliced
- 2 large cloves garlic – minced
- 3 T grated fresh ginger root
- 1 t fresh ground pepper
- 1 t dry mustard
- OPTIONAL: 1/4 c brown sugar – or to taste
- Variation: substitute Sherry for the bourbon
ROMAINE SALAD

Toss together
- Romaine lettuce
- Mandarin oranges
- Almonds
- Feta Cheese
- Raspberry vinaigrette dressing
- Dried Cranberries
CREAMY CHICKEN PAPRIKASH WITH FRESH DILL

1 1/4 c = 6 points
- 1 # skinless boneless chicken breasts, cut into 1/2-inch pieces
- 1/2 t salt
- 1/8 t pepper
- 2 t olive oil
- 1 large onion, chopped
- 1 red bell pepper, seeded and thinly sliced
- 2 garlic cloves, minced
- 2 T paprika
- 2 T all-purpose flour
- 1 (14 1/2-oz) can diced tomatoes
- 1 c reduced-sodium chicken broth
- 3 T light sour cream
- 3 T chopped fresh dill
SHEPHERD’S SALAD

Toss together
- 3 tomatoes
- 1 bunch parley
- 1/2 c black olives
- 1/2 c small red onion, chopped
- 2 T cider vinegar
- 2 T lemon juice
- 4 T olive oil
- Salt and pepper
- Feta cheese
MASHED POTATO SOUP WITH ROMANESQUE BROCCOLI

Chop and rinse leeks really well
- 4 large leeks or 6 - 8 small ones
- 3-4 smallish potatoes, peeled and chunked
- 1 head Romanesque broccoli, chunked
- olive oil
- broth or water to cover
- sea salt
- freshly ground pepper
- butter (optional)
- cream (optional)
- handful of herbs
ICEBERG LETTUCE WITH BLUE CHEESE VINAIGRETTE

1. Whisk together vinegar, shallot, and mustard
- 3 T white-wine vinegar
- 1 small shallot, finely chopped
- 1 t Dijon mustard
- 1/2 c extra-virgin olive oil
- 1/4 c crumbled blue cheese (1 oz)
- Coarse salt and freshly ground pepper
- 1 head iceberg lettuce, quartered into wedges
SEVEN LAYER COOKIES

Melt margarine in an 8x11-inch pan; add in layers as listed
- 1 stickj margarine
- 1 1/2 c graham cracker crumbs
- 1 (6 oz) pkg chocolate chips
- 1 (6 oz) pkg. butterscotch schips
- 1 c flaked coconut
- 1 c. nuts (chopped) (optional)
- 1 (15oz) can sweetened condensed milk
MAPLE BOURBON TURKEY GLAZE

Combine all of the ingredients in a bowl and refrigerate, covered, overnight
- 1 c bourbon
- 2/3 c pure maple syrup
- 2/3 c ketchup
- 1/3 c soy sauce
- 2 T finely minced fresh ginger
- 2 T packed dark brown sugar
CHICKEN PARM SOUP

1. In a large pot, heat oil over medium heat
- 2 T olive oil
- 1 large diced onion
- 3 cloves garlic, minced
- 1 t crashed red pepper flakes
- 1 15oz can diced tomatoes
- 4 c low-sodium chicken broth
- 1 # boneless skinless chicken breasts, cut into 1# chunks
- 8 oz penne
- 1 1/2 c shredded Parmesan cheese
- 1/2 c shredded mozzarella cheese
- Coarse salt
- Fresh ground black pepper
- Fresh parsley, for garnish
PENNE ALLA VODKA

1. Puree half of tomatoes in food processor until smooth
- 1 (28oz) can whole tomatoes, drained, liquid reserved
- 2 T olive oil
- 1/2 small onion, minced (about 1/4 c)
- 1 T tomato paste
- 2 medium garlic cloves, minced
- 1/4 - 1/2 t hot pepper flakes
- Salt
- 1/3 c vodka
- 1/2 c heavy cream
- 1 pound penne pasta
- 2 T finely chopped fresh basil leaves
- Freshly grated Parmesan cheese
