SLOW COOKER THAI CHICKEN

8 points = 1 1/2 c
- 13 1/2 oz light unsweetened coconut milk
- 7 t Thai curry paste, red variety, divided
- 1 1/2 t salt
- 1/2 head uncooked cauliflower, cut into small florets
- 1 # uncooked potatoes peeled., cut into chunks
- 1 medium sweet red pepper, cut into chunks
- 2 medium uncooked carrots, cut into 1/2" thick slices
- 1 1/2 # uncooked boneless skinless chicken breasts, six 4 oz pieces
- 2 T smooth reduce fat peanut butter
- 1/3 c cilantro, fresh, chopped
- 3 medium uncooked scallions, sliced
- 1 medium fresh lime, cut into 6 wedges
- 2 T peanuts, salted, chopped
PEPPERNUTS

Roll into long rolls the size of a penny
- Put into a bowl. Add:
- 1 c shortening
- 1 1/2 c sugar
- 3 c syrup (I use 2 c Brer Rabbit Molasses and 1 c dark Karo.)
- Put all ingredients in a sauce pan and cook over low hear until melted. Cool
- 10 c flour (You may add more or less flour to make a stiff dough.)
- 2 t cinnamon
- 2 t ground cloves
- 2 t allspice
- 2 t baking soda dissolved in 1/4 c hot water
SECRET RECIPE CHOCOLATE CHIP COOKIES

1. Preheat oven to 350 degrees F
- 1/2 c rolled oats, regular or quick
- 2 1/4 c all-purpose flour
- 1 1/2 t baking soda
- 1/2 t salt
- 1/4 t cinnamon
- 1 c (2 sticks) butter, softened
- 3/4 c firmly packed brown sugar
- 3/4 c granulated sugar
- 2 t vanilla extract
- 1 t lemon juice
- 2 eggs
- 3 c semi-sweet chocolate chips
- 1 1/2 chopped walnuts
PARTY MIX

Put in large roaster. Mix together
- 1 box Rice Chex
- Goldfish
- Pretzels
- 2 packages Bugles
- 1 - 2 cans mixed nuts
- 1 pkg dry Ranch dressing
- 1/2 t garlic powder
- 1 Orville Redenbacker popping oil with butter
GRILLED SALMON WITH MUSTARD-WINE SAUCE

1. Prepare a grill for high heat
- 1 t minced garlic
- 1/2 t salt
- 1 t freshly ground black pepper, divided
- 2 T each olive oil and fresh lemon juice
- 6 salmon fillets
- 2 T butter
- 1 T flour
- 1/2 t paprika
- 1/4 c milk
- 2 T Dijon mustard
- 1/4 c dry white wine,
- 1 t each shopped fresh basil and rosemary leaves
CORN PUDDING

Butter a 2-quart casserole
- 2 (11-ounce) cans whole-kernel corn, drained
- 4 eggs
- 2 T flour dissolved in 1/2 c milk
- 1/4 c (1/2 stick) butter, melted
- Salt and pepper

- 1 c cranberry sauce
- 1/2 c ketchup
- 2 T brown sugar
- 2 T Dijon mustard
- 1 T maple syrup
- 1 T apple cider vinegar
- 1 t Worcestershire sauce
- 1/4 t ground cinnamon
- Kosher salt and freshly ground black pepper, to taste
- 1 (32 oz) package frozen, fully cooked meatballs
- 2 T chopped fresh chives
WELL-DRESSED SALMON

On a cutting board, dice the cucumber into quarter-inch pieces
- 1/2 English (seedless) cucumber
- 2 small plum tomatoes
- 1 shallot or 1/4 red onion, finely chopped, divided
- 2 Dijon mustard
- 2 T sugar
- 1/4 c white wine vinegar
- 1/2 c olive oil, plus a drizzle
- 1/4 c fresh dill, finely chopped
- Salt and freshly ground black pepper
- 4 skinless salmon fillets (6 oz each)
- Seafood seasoing, such as Old Bay brand
MINI ZUCCHINI QUICHES

- 2 small zucchini, finely chopped
- 1 large onion, finely chopped
- 1 c shredded parmesan cheese (about 3 oz)
- 6 large eggs
- 1/2 c flour
- 1/4 c finely chopped fresh basil
- 3 T olive oil
- 2 t baking powder
- 1 t sugar
- 1 t kosher salt
- 1/2 t black pepper
KATHY'S POT ROAST

- 1 package brown gravy mix
- 1 package Original Ranch Dressing
- 1 package onion soup
- 1 package Good Seasonings Italian Dressing
- 3 -4 T Wondra flour
