FRENCH DRESSING

Whisk ingredients together
- 1/3 C white wine vinegar
- 1/3 C sugar
- 1/2 c ketchup
- 1/2 c extra-virgin olive oil
- 1 t garlic powder
- 2 t Worcestershire sauce
- 1/4 small white onion, finely chopped or grated
- Salt and white pepper
SWISS-CHARD BAKE

Wash and peel stems from chard and drop in boiling water
- 1 1/2 lb Swiss chard
- 1/2 onion, minced
- 2 T butter
- 4 eggs, well beaten
- 1 c buttermilk
- 2 T flour
- 1/2 t salt
- Few drops of pepper sauce
- 1 pkg shredded cheddar cheese
ANGEL HAIR PASTA WITH SHRIMP AND BASIL

1. Bring a large pot of water to a boil, and add 1 T oil and salt
- 1/4 1/4 1/4 c olive oil, divided
- 1 1 1 pkg basil angel hair pasta
- 1 1 1 t chopped garlic
- 1 1 1 # large strip, peeled, deveined
- 2 2 oz) cans 2 (28 oz) cans Italian-style diced tomatoes, drained
- 1/2 1/2 1/2 c dry white wine
- 14 14 14 c chopped fresh parsley
- 3 3 3 T chopped fresh basil
- 3 3 3 T freshly grated Parmesan cheese
TURKEY TACO MEATLOAF

Mix all together using 1/2 can of the salsa
- 2 lbs ground turkey
- 1 c finely ground taco chips
- 2 eggs
- 1 small can chopped green chilis
- 1 package taco powder mix
- 1 medium can salsa, divided
BAKED CHICKEN WITH LEMON AND FRESH HERBS

- 1 1 4 # uncooked boneless skinless chicken breasts, four 4 oz halves
- 1/2 1/2 1/2 t salt
- 1/4 1/4 1/4 t black pepper
- 1 1 1 t olive oil
- 2 2 2 t fresh lemon juice
- 2 2 2 t rosemary, fresh chopped
- 2 2 2 t fresh parsley, chopped
- 1/4 1/4 1/4 c reduced sodium chicken broth
- 1/2 1/2 1/2 medium lemon, quarters for garnish
SWEET POTATO CASSEROLE

Boil potatoes until soft in the center
- Topping:
- 3 large sweet potatoes
- 1 large yam
- 1/2 c sugar
- 1/2 c butter
- 2 eggs
- 1 t vanilla
- You can use 3 large yams and 1 large sweet potato.
- 1/3 c butter
- 1 c brown sugar
- 1/2 c flour
- 1 c pecans, chopped
CURRIED CARROT SOUP

In large saucepan, saute onions in olive oil till translucent
- 1 large onion, diced
- 2 T olive oil
- 1 t orange zest
- 1 T mild yellow curry powder
- 2 pounds carrots, peeled and diced
- 1 quart vegetable stock
- Salt
- Freshly ground black pepper
OIL AND VINEGAR

- 1/2 t Dijon mustard
- Pinch of minced garlic
CHICKEN RICE CASSEROLE

- 1/4 CUP CANNED MUSHROOM PIECES AND STEMS
- 1 CHICKEN BOUILLON CUBE
- 1/2 CUP CHOPPED ONION
- 1/2 CUP BUTTER
- 2 TABLESPOONS FLOUR
- 1 1/2 CUPS LIGHT CREAM
- 3 CUPS COOKED RICE
- 3 CUPS DICED COOKED CHICKEN
- 1/4 CUP CHOPPED PIMIENTO
- 2 TABLESPOONS MINCED PARSLEY
- 3/4 TEASPOON SALT
- 1/4 TEASPOON PEPPER
- 1/4 CUP POTATO CHIPS (CRUSHED)
