SANDY'S TEXAS CAVIER

Chop vegetables in small pieces
- Dressing:
- 2 tomatoes
- 1/2 red onion
- 1/2 each yellow, red, orange bell pepper
- 1/2 cucumber
- 2 celery stalks
- 1 can corn with peppers
- 1 can diced green ortega chilis
- 1 small can black beans
- 1/4 c sugar - I would use less so it is less sweet
- 1/4 c cider vinegar
- 1/4 c olive oil
- Pepper
CHERRY CRUNCH

Mix pie filling and cherries in ungreased square baking dish (8x8); spread evenly
- 1 can (21 oz) cherry pie filling
- 1 can (16 1/2 oz) pitted dark sweet cherries, drained
- 3/4 c Bisquick
- 1/2 c chopped nuts
- 1/4 c sugar
- 1/2 t ground cinnamon
- 1/4 c firm butter
GRANDDADS'S MAPLE -SOY SALMON

Coat a stovetop grill or large skillet with cooking spray and heat over medium-high
- Cooking spray
- 6 salmon fillets (5 oz each)
- Salt and pepper
- 1/3 c maple syrup
- 2 T reduced-sodium soy sauce
- 2 t Dijon mustard
BARBECUE MEATBALLS

Mix the sauces with just enough water to rinse the bottles
- 160 frozen bite size meatballs (Smart and Final) beef/chicken or both
- large size Masterpiece Barbecue Sauce
- smaller size rib sauce with brown sugar
- 2 T soy sauce
- 2 T Worcestershire sauce
- Dash of garlic powder
- Dash of red pepper flakes
ROASTED RED PEPPER HUMMUS

1. Put all ingredients in a food processor and process until desired consistency
- 1 can garbanzo beans (15oz), drained (reserve about 1/4 c liquid)
- 2 cloves garlic, minced
- 1/4 c fresh lemon juice
- 1 t peanut butter
- 1 jar roasted red peppers (4 oz)
- Salt and pepper to taste
OATMEAL PEANUT BUTTER CHOCOLATE CHIP COOKIES

In a large bowl, stir together oats, flour, baking powder, baking soda and salt
- 1 1/2 old-fashioned rolled oats
- 2 c flour
- 1 t baking powder
- 3/4 c cocoa
- 1 t baking soda
- 1 t salt
- 1 c (2 sticks) unsalted butter, at room temperature
- 1 c sugar
- 1 c firmly packed brown sugar
- 1 T vanilla
- 3/4 c peanut butter
- 2 large eggs
- 1 (12oz) bag semisweet chocolate chips
- 8 oz semisweet chocolate, grated
FUDGE BRWNIES

1. Preheat the oven to 350 degrees
- 4 large eggs
- 1 1/4 c Double Dutch Dark Cocoa or Dutch -process cocoa
- 1 t salt
- 1 t baking powder
- 1 t expresso powder
- 1 T vanilla extract
- 1 c (2 sticks) unsalted butter
- 2 1/4 c sugar
- 1 1/2 c King Arthur Unbleached All-Purpose flour
- 2 c chocolate chips
ROASTED RED PEPPER HUMMUS 2

Points = 3 1/4 c serving
- 30 oz canned chickpeas
- 7 oz roasted red peppers (packed in water), bottled, drained
- 3 medium garlic cloves
- 3 T canned tahini
- 1 T olive oil
- 6 T fresh lemon juice
- 1 t curry powder
- 1/2 t ground cumin
- 1/2 t ground coriander
- 1 1/4 t salt
- 1/2 t freshly ground pepper
HONEY BALSAMIC GLAZE FOR CHICKEN

Prepare chicken. Heat oven to 425 degrees
- 1 1 1 T olive oil
- 4 4 1 3/4 chicken thighs (about 1 3/4 #)
- Kosher salt and pepper
- 1/2 1/2 1/2 c balsamic vinegar
- 1/4 1/4 1/4 c honey
- 1 1 1 T soy sauce
- 2 2 2 cloves garlic, minced
LEMON CHEESE BARS

Mix dry cake mix and oil until crumbly
- 1 pkg lemon cake mix
- 8 oz cream cheese, softened
- 1 t lemon juice
- 1/3 c sugar
- 1 egg
- 1/3 c vegetable oil
