Amaretto - Irish Cream Cheesecake

Crust: Mix all ingredients, pat in bottom of sprinform pan & bake at 375 for 7 min
- Filling:
- 3 8 oz package cream cheese
- 1 C sugar
- 4 eggs
- 1/3 C cream
- 1/3 C blanced almonds ground
- 1/4 C baileys
- 1/4 C amaraetto
- Topping:
- 1 1/2 C sour cream
- 1 T sugar
- 1/2 t vanilla or almond
- 1/3 C toasted almonds
- Crust: 1 1/2 C vanilla wafers or spice cookies, 1/2 C chopped toasted almonds, 1/4 C butter, 1 T amaretto
Orange Curd

Place orange juice in saucepan and bring to a boil over med heat
- 1.5 C orange juice (fresh squeezed is best!)
- 1 C sugar
- Grated zest of two oranges
- 6 egg yolks
- 1/2 cup (1 stick) cold, unsalted butter, cut into 1/2" pieces
Rhubarb Dump Cake

- 4 C rhubarb
- 1 C sugar
- 1 box Jello - Strawberry
- 1 white cake mix
- 1 1/4 C water
- 1/2 C butter melted
Orange Curd Tarts

Lightly grease thirty-two 1 3/4-inch muffin cups; set aside
- INGREDIENTS:
- 1 package piecrust mix (for 2 crusts) 1/4 cup finely chopped pecans 1/3 cup cold water
- 1 cup sugar 2 teaspoons cornstarch 1 tablespoon finely shredded orange peel (set aside)
- 1/3 cup orange juice 1 tablespoon butter, cut up 3 beaten eggs
- small orange peel curls (optional)
Lemon Posset

Mix lemon zest, juice, wine, sugar together in bowl
- Grated zest and juice from 1 large lemon
- 4 T dry white wine
- 1/4 C superfine sugar
- 1 1/4 C cream
- 2 egg whites
Ginger Pumpkin Tassies

- CRUST
- 1 1/4 cups all-purpose flour
- 1/2 cup butter, softened
- 1 (3 ounce) package cream cheese, softened
- FILLING
- 3/4 cup firmly pkd brown sugar
- 1/2 cup whole canned pumpkin (not pie mix)
- 3 tablespoons half-and-half (can use low fat)
- 1 teaspoon grated gingerroot
- 1/2 teaspoon vanilla extract
- 1 egg
- TOPPING
- 1/4 cup all-purpose flour
- 2 tablespoons brown sugar, pkd
- 1 tablespoon butter, softened
Whole Grain Chocolate Chip Cookies

1) Beat together the butter, sugars, salt, baking soda, baking powder and vanilla till well combined
- 1/2 cup butter
- 1/3 cup + 1 tablespoon granulated sugar
- 1/3 cup brown sugar, light or dark, packed
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 large egg
- 3/4 cup King Arthur 100% White Whole Wheat Flour or Traditional Whole Wheat Flour
- 3/4 cup quick rolled oats, ground in a food processor or blender if desired
- 2 tablespoons orange juice, optional*
- 2 cups chips, nuts, and/or dried fruit, optional
- *Use the optional orange juice if you're adding chips, nuts, fruit, etc. Don't add the orange juice if you're not using any add-ins.

- 1/4 C confectioner's sugar
- 1 1/2 C greek yogurt
- 1 C heavy cream
- 1 c lemon curd
