Peanut Butter Cookies

1) Preheat the oven to 350°F
- 1/4 cup vegetable shortening
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 T molasses
- 1.5 C crunchy peanut butter
- 1 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 to 3 tablespoons water*
"Healthy" Chocolate Chip Cookies

Preheat oven to 376. Stir together flour, baking soda and salt; set aside
- 2 C whole wheat flour
- 1 t baking soda
- 1 t salt
- 1 C I can't believe it's not butter sticks
- .75 C brown sugar, firmly packed (or splenda substitute equivalent)
- .75 C sugar (or spenda substitue equivalent)
- 2 eggs
- 1 t vanilla
- 1 t water
- 1 packages of dark chocolate chips
- 1 C grapnuts cereal
Mushroom goulash & pierogi

Heat EVOO and add mushrooms, cook until softened (9 min); transfer to bowl
- 2 T extra-vigin olive oil
- 1 pound cremini mushrooms, chopped
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic finely chopped
- 2 T smoked sweet paprika
- 2 T finely chopped fresh marjoram
- 1.5 t ground coriander
- salt and pepper
- 2 T worcestershire sauce
- 2 T tomato puree
- A few dashes hot pepper sauce
- 2 C vegetable stock
- 1 pound frozen potato pierogi
- 2 T butter
- 3 T finely chopped fresh chives
- 3 T finely chopped fresh dill
- sour cream for serving

- For the cake
- 2 cups bleached all-purpose flour
- 3/4 cup natural cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups sugar
- 2 large eggs
- 1 cup mayonnaise (not low-fat)
- 2 teaspoons pure vanilla extract
- 1 1/3 cups boiling water
- For the caramel
- 1 cup granulated sugar
- 3 tablespoons water
- 1 cup heavy cream
- For the butterscotch buttercream
- 6 large eggs
- 1 1/2 cups firmly packed dark brown sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 1/2 pounds cold unsalted butter
- 2 tablespoons bourbon

- 1 C plus 2 T flour
- 1/2 t baking soda
- 1/2 C butter
- 6 T granulated sugar
- 6 T confectioners sugar
- 1 egg
- 1/2 t vanilla
- 1 package (6 oz) mini chocolate chips
Cinnamon Caramel Bread Pudding

Cut crusts off bread to make the right size, then slice into quarters
- 20 3 1/2 square slices cinnamon-raisin bread (not ends)
- 12 large eggs
- 2 1/2 cups whole milk
- 2 cups chilled whipping cream (heavy)
- 1 cup sugar
- 2 T vanilla extract
- 1 1/2 t finely grated orange peel
- salt to taste
- 2 T pwd sugar
- Caramel sauce warmed
Eggnog cookies

Directions 1) Cream together the butter, confectioners' sugar, and corn syrup until light and fluffy
- 1 cup unsalted butter
- 2 cups confectioners' sugar or glazing sugar
- 2 tablespoons light corn syrup
- 3/4 teaspoon eggnog flavor
- 1/2 teaspoon ground nutmeg
- 3/4 teaspoon salt
- 1 large egg, lightly beaten with 2 tablespoons water
- 1 teaspoon baker's ammonia or 2 teaspoons baking powder
- 3 1/2 cups King Arthur Unbleached All-Purpose Flour
Puff Pastry

Directions 1) Whisk together the flour, salt, and baking powder
- 1 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1/2 teaspoon salt*
- 1/2 teaspoon baking powder
- 1 cup cold unsalted butter,* cut in pats
- 1/2 cup sour cream
- *If you use salted butter, reduce the amount of salt to 1/4 teaspoon
