orange glazed pumpkin cake

Beat sugar and shortening until fluffy
- Cake:
- 2 C brown sugar
- 3/4 C shortening
- 16 oz can pumpkin
- 4 eggs
- 1/4 C water
- 2 C flour
- 1 1/3 C oatmeal
- 1/2 C nuts
- 2 t baking powder (make sure it's fresh, or use 3)
- 1 T pumpkin pie spice
- 1 1/2 t baking soad
- 3/4 t salt
- Glaze:
- 1 C powdered sugar
- 4 t orange juice
- 3/4 t grated orange peel
Pecan Spritz Cookies

In a mixing bowl, cream the butter, cream cheese and brown sugar
- 1/2 cup butter (no substitutes) -- softened
- 1 (3-ounce) package cream cheese -- softened
- 1/2 cup packed brown sugar
- 2 teaspoons grated orange peel
- 1/2 teaspoon orange or vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- Colored sugar
Sweet & Spicy grilled veggies with chicken sausage

Whisk together sauce ingredients, cook veggies and sausage on med-high grill and brush with sauce
- 3/4 c peach preserves
- 1/4 c light soy sauce
- 2 T ginger root
- 2 cloves garlic
- 1 t asian hot chilie sauce (sriracha)
- 1 medium eggplan 1/2" slices
- 2 large zucchini cut diagonally into 1/2" slices
- 2 summer squash cut diagonally into 1/1 inch slices
- 3 assorted sweet peppers, seeds removed cut into 4 pieces
- 4 T veg oil
- 1 package cooked chicken and apple sausages
- 1/2 pound whole wheat spaghetti
English Savoy Cookies

Beat egg whites in blow until stiff
- 3 eggs separated
- 3/4 c confectioners sugar
- 1 1/4 C self-rising flour
- 1 C cornmeal
Enchilada pie

Cut three 25" x 3" strips of foil crisscross so they resemble spokes of a wheel
- 12 oz cooked ground beef
- 1 c chopped onion
- 1/2 c shopped green pepper
- 2 t canola oil
- 1 16 oz can kidney beans, rinsed and drained
- 1 can 15 oz black beans rinsed and drained
- 1 can diced tomatoes and green chilies undrained
- 1/2 c water
- 1 1/2 t chili powder
- 1/2 t ground cume
- 1/4 t pepper
- 6 whole wheat tortillas
- 2 cups shredded cheddar cheese
Lime Curd

Whilk lime juice and cornstarch in double boiler
- 1/3 C lime juice
- 1 T cornstarch
- 1 C sugar
- grated zest of 3 limes
- 6 egg yolks
- 1/2 C butter cold, unsalted, but into 1/2" pieces

- 1 C milk
- 4 T flour
- 1 C sugar
- 2 t vanilla
- 1/2 C shortening
- 1 C peanut butter
Eggnog Truffles

- 1 pound white baking chocolate, divided
- 4 ounces cream cheese, softened
- 1/4 cup confectioners’ sugar
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon rum extract
- Ground nutmeg for sprinkling
