Chicken and Mushroom Chimichangas

Preheat oven to 400 degrees F (200 degrees C)
- 1 tbsp vegetable oil, divided
- 1/2 cup diced onion
- 1/2 cup diced poblano peppers
- 1/2 cup sliced mushrooms
- salt and freshly ground black pepper to taste
- 12 oz skinless, boneless chicken breast halves, cut into 1/2" cubes
- 1/4 tsp ground cumin
- 1/4 tsp ground chipotle
- 1 pinch dried Mexican oregano
- 1 tbsp water, or as needed
- 4 oz shredded pepperjack cheese
- 1 pinch cayenne pepper, or to taste
- 4 large flour tortillas
- 1 egg white, beaten
- 2 tbsp vegetable oil
- 1/4 cup guacamole (optional)
- 1/4 cup sour cream (optional)
- 1/4 cup salsa (optional)
Mushroom Chicken in Sour Cream Sauce

1. Combine salt, pepper, paprika, lemon pepper and garlic powder
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp paprika
- 1/4 tsp lemon pepper
- 1 tsp garlic powder
- 6 skinless boneless chicken breasts
- 1 can cream of mushroom soup
- 8 oz sour cream
- 1/2 cup dry white wine of chicken broth
- 1/2 lb fresh mushrooms, sliced
Herb Garlic and Cheese Rolls

- 1 (15oz) package Sister Schubert's Dinner Yeast Rolls
- 1/4 cup olive oil
- 1 large clove garlic, minced
- 1 tsp Italian herb blend
- 2 tbsp chopped parsley
- 1/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/3 cup grated Parmesan cheese

1. Pour the cream over the bread in a bowl and let stand for 10 mins
- 4 cups heavy whipping cream
- 16 oz French bread, torn into 1" pieces

1. Preheat oven to 350F. Beat eggs in a medium sized bowl
- 2 eggs
- 1 1/2 cups grated cheddar cheese, divided
- 1 (8oz) can cream style corn
- 1 (8oz) can whole kernel corn, drained
- 1 pkg (8oz) corn muffin mix
- 1 cup sour cream (or greek yogurt)
- 6 tbsp butter, melted
Juicy Lucy Burger

1. On each of 6 of the patties, arrange and slightly overlap 8 cheese quarters to within 1/2" of edge
- 1 cup soft bread crumbs
- 1/2 cup milk or beef broth
- 1 egg, lightly beaten
- 1/4 cup seasoned fine dry bread crumbs
- 2 tbsp Worcestershire sauce
- 1 tsp kosher salt or 1/2 tsp regular salt
- 1/2 tsp freshly ground black pepper
- 2 pounds 85% lean ground beef
- 12 (3/4-1oz) slice American, Swiss and/or Colby cheese, quartered
- 6 large hamburger buns
- Assorted condiments, such as as ketchup, chopped pickled peppers, chopped or sliced tomatoes, and/or pickle relish

1. In a large container with a lid, combine all marinade ingredients (through the salt) until well incorporated
- 1/2 bottle liquid smoke (about 2oz)
- 1/2 bottle A1 steak sauce (about 8oz)

- 1/4 cup Olevano Extra Virgin olive oil
- 1/4 cup red wine
- 1/4 cup balsamic vinegar
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp ground black pepper
- 1/2 tsp salt
