Granola Bars

1. Preheat oven to 375F. 2
- 2 1/4 cups rolled oats
- 1/2 cup shredded coconut
- 3 tablespoons brown sugar
- 1/2 cup raisins
- 1/2 cup flour
- 1/2 teaspoon baking soda
- 1/3 cup softened butter
- 1/2 teaspoon vanilla extract
- 1/3 cup honey
Spaghetti con Fagiolini (Summer Spaghetti with Green Beans)

Ideal pasta for late summer
- 12 ounces green beans, ends trimmed
- 1 pound spaghetti
- Salt to taste
- 1/4 cup extra-virgin olive oil, plus additional for garnish
- 1/2 medium onion, finely chopped
- 5 medium tomatoes, peeled, seeded and chopped
- Freshly ground black pepper to taste
- 1/2 cup chopped fresh basil
- 1 cup (4 ounces) crumbled ricotta salata or feta cheese or grated Parmigiano-Reggiano cheese
Spinach and Strawberry Salad

I make half the dressing and just pour what is needed
- 2 bunches spinach, rinsed and torn into bite-size pieces
- 4 cups sliced strawberries
- 1/2 cup vegetable oil
- 1/4 cup white wine vinegar
- 1/2 cup white sugar
- 1/4 teaspoon paprika
- 2 tablespoons sesame seeds
- 1 tablespoon poppy seeds
Swedish Sweet Mustard

Place all the ingredients in the container of a blender, blend for 1 minute
- 1/2 cup dry mustard
- 1/2 cup sugar
- 1 teaspoon salt
- Pinch ground white pepper
- 2 tablespoons white vinegar
- 1/4 cup boiling water
- 1/4 cup vegetable oil
- 1/2 cup heavy cream
Blueberry-Soy Smoothie

Puree all ingredients in a blender until smooth
- 1 cup frozen blueberries
- 1 banana
- 1 container (6 oz.) vanilla soy milk
Black Hills Golden Egg Bake

In a skillet, saute mushrooms and green pepper in butter until tender
- 1/2 cup sliced fresh mushrooms
- 1/2 cup chopped green pepper
- 1/4 cup butter, cubed
- 10 eggs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 (16 ounce) container small curd cottage cheese
- 2 cups shredded Cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 1/2 pound bulk pork sausage, cooked and drained
- 6 bacon strips, cooked and crumbled
- 1 (2.25 ounce) can sliced ripe olives, drained
Chocolate Snicker-Logs

Heat oven to 400 degrees F
- 1/2 cup soft butter
- 3/4 cup sugar
- 1/4 cup pasteurized egg
- 1 1/3 cup sifted flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon soda
- 1/8 teaspoon salt
- 1/2 cup cocoa powder
- Cinnamon and sugar mixture
- Powdered sugar
Grilled Green Bean Salad with Cherry Tomatoes

Combine first 3 ingredients
- 1/2 pound green beans, trimmed
- 1 1/2 teaspoons extra virgin olive oil
- Sea salt and freshly ground black pepper, to taste
- 1 pint cherry tomatoes, cut in half
- 1 small shallot, finely minced
- 1/2 tablespoon red wine vinegar
- 1/2 tablespoon balsamic vinegar
- 2 to 3 tablespoons extra virgin olive oil
- 1 tablespoon minced fresh herbs (basil, parsley)
- Sea salt and freshly ground black pepper, to taste
Bubble Ring

Cut bread into rolls with scissors (32 pieces per loaf) and place in a bread pan
- 2 loaves frozen bread, thawed
- 6 oz large butterscotch pudding
- 1 stick plus 2 tbsp of margarine
- 1 cup brown sugar
- 1 tsp cinnamon
