Tuscan Bean Soup

Place the kidney beans in a medium pot, add water to cover by 2-inches and bring to a boil
- 1/2 cup kidney beans soaked overnight or 1 (14-ounce) can store-bought beans, drained and rinsed
- 1/2 cup cannellini beans soaked overnight or 1 (14-ounce) can store-bought beans, drained and rinsed
- 3 tablespoons olive oil, plus more for drizzling on bread
- 1/2 pound diced pancetta
- 2 cups diced yellow onions
- 1 cup diced celery
- 1 cup diced carrots
- 4 cloves garlic, sliced
- Salt and freshly ground black pepper
- 1 (14-ounce) can diced tomatoes
- 1 (14-ounce) can chick peas, drained and rinsed
- 2 quarts chicken stock, plus extra water if needed
- 2 sprigs rosemary
- 3 sprigs thyme
- 1 sprig oregano
- 1 bay leaf
- 1 teaspoon red chili flakes
- 2 heads Lacinata kale, stems removed and cut into bite size pieces
- 1 loaf Italian peasant bread, cut into thick slices
- Parmigiano-Reggiano, grated, for serving
Pineapple Chutney

In saucepan over medium heat, saute onions, ginger, jalapenos, and cumin for 6 minutes
- 1 medium onion, diced
- 2 tablespoons ginger, small dice
- 6 jalapenos, diced
- 1 tablespoon cumin, toasted and ground
- 1/2 cup rum
- 1 pineapple, diced
- 1/2 cup fresh lime juice
- 1/2 cup raw sugar
- 1/4 cup cilantro, chopped
- Salt and fresh ground pepper
Kale Agrodolce

Serve with a simple roast chicken or pork tenderloin
- 2 tablespoons olive oil
- 4 large cloves garlic, thinly sliced
- 1 bunch kale (3/4 to 1 pound), washed, stemmed, coarsely chopped and dried thoroughly

Blackberry Tart - Sally's

For Crust: In large mixing bowl, mix the flour, ground almonds, brown sugar and salt together
- For Sweet Almond Pastry Crust:
- 2 cups all purpose flour
- 1/2 cup finely ground almonds
- 1 heaping tablespoon brown sugar
- Pinch salt
- 1/2 pound cold unsalted butter, cut into small cubes
- 5 to 6 tablespoons ice water

- For Tart Filling:
- 3 pints blackberries
- 1/2 cup all-purpose flour

Triple Chocolate Cherry Drop Cookies

- 1 1/4 cups plus 2 tablespoons all-purpose flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened to room temperature
- 1/2 cup granulated sugar
- 2/3 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 cup finely chopped chocolate chunks or miniature chocolate chips
- 3/4 cup dried cherries, plus another 36 reserved
- 11 -ounce bag white chocolate bits
Butter Pecan Cheesecake

Combine cracker crumbs, 1/2 cup sugar, butter, and 1/2 cup pecans, mixing well

- 1/2 cup finely chopped pecans
- 3 (8-ounce) packages cream cheese, softened

Pate a Choux: Preheat oven to 425 degrees F
- Pate a Choux for the eclair shells:

- 1 cup water
- 4 ounces butter

- 6 tablespoons flour

- 5 ounces bittersweet chocolate

Blackberry Crisp

- 4 cups fresh blackberries
- 1/2 cup sugar
- Juice of 1 lemon
- 2 tablespoons flour, plus 1/2 cup
- 1/2 cup brown sugar
- 1 stick butter
Strawberry Ice Cream

Scald milk in top of a double boiler; add a small amount of milk to sugar mixture, stirring to make a smooth paste
- 1 cup sugar, divided
- 2 tablespoons all-purpose flour
- Dash of salt
- l 1/2 cups milk
- 2 eggs, slightly beaten
- l 1/2 cups sieved or pureed fresh strawberries
- 1 1/2 cups whipping cream
- l 1/2 teaspoons vanilla extract
- 1 teaspoon almond extract
- Combine 3/4 cup sugar, flour, and salt; set aside.
Karen's Smoked Chicken Lasagna
