Apple-Rutabaga Soup

Can be served hot or cold and it freezes well
- 4 ounces (1 stick) unsalted butter
- 1 cup coarsely chopped onion
- 1 cup peeled, cored and coarsely chopped Granny Smith apple
- 1 cup peeled and coarsely chopped rutabaga
- 1 cup peeled, seeded and coarsely chopped butternut squash
- 1 cup peeled and coarsely chopped carrots
- 1 cup peeled and coarsely chopped sweet potato
- 1 quart good chicken stock or broth (may substitute vegetable stock)
- 2 cups heavy cream (may substitute 1 cup fat-free half-and-half for 1 of the cups of heavy cream)
- 1/4 cup maple syrup
- salt
- cayenne pepper
Southern Biscuits

Preheat the oven to 450 degrees
- 1 cup skim milk
- 1 tablespoon freshly squeezed lemon juice
- 9 1/4 ounces all-purpose flour, plus extra for rolling
- 4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 3/4 teaspoon salt
- 1 ounce unsalted butter, chilled
- 2 tablespoons shortening
Gazpacho

Place all the vegetables and herbs in one bowl and the lemon juice, vinegar and olive oil in another
- For the soup:
- 4 ripe tomatoes, quartered
- 2 cloves garlic
- 1 small onion, peeled, poached 1 minute in boiling water, drained and quartered
- 3/4 medium cucumber, peeled and coarsely chopped (use the rest for garnish)
- 3/4 large carrot, coarsely chopped (use the rest for garnish)
- 3/4 large green pepper, seeded and quartered (use the rest for garnish)
- 2 sprigs fresh parsley
- 1/4 cup fresh basil or 2 tablespoons dried
- 1/4 to 1/2 cup lemon juice, to taste (2 lemons)
- 2 tablespoons white wine vinegar
- 2 to 4 tablespoons olive oil, to taste
- 3 cups cold V-8 juice
- Salt and freshly ground pepper to taste
- 1/8 teaspoon cayenne, 1 small jalapeno, seeded or 1 banana pepper, seeded
- For Garnish:
- 1 cup cubed tofu
- 1/4 cup minced cucumber
- 1/4 cup minced green pepper
- 2 large ripe tomatoes, chopped
- 3 medium mushrooms, wiped clean and sliced
- 1/2 cup alfalfa, mung or lentil sprouts
- 2 to 3 green onions, white part and green, chopped
- 1/4 cup sunflower seeds
- 1/2 cup plain low-fat yogurt
Mike's Executive Chili

Best when cooked a day before serving and refrigerated
- 2-3 lbs. Chuck roast or other cut, cubed (1/2 inch cubes or similar size) trim most fat
- 2 15-oz cans of chili-hot or mexi-hot beans
- 1 28-oz whole tomatoes
- 1 15-oz can of tomato sauce
- 1 can of tomato paste
- 2 medium to large onions, diced
- 2 green peppers, diced
- 5-6 tablespoons (heaping) of chili powder
- salt
- pepper
- olive oil
Amish Friendship Bread

Do not use a metal spoon or bowl for mixing
- For starter:
- 1 cup milk
- 1 cup sugar
- 1 cup flour
- For bread:
- 1 cup oil
- 1 cup sugar
- 1 teaspoon vanilla
- 3 large eggs
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups flour
- 1/2 cup milk
- 1/2 teaspoon baking soda
- 1 small box (4 serving size) instant vanilla pudding
- 2 teaspoon cinnamon
- 1 cup chopped pecans (optional)
- 1/2 cup raisins (optional)
- 1/2 cup chocolate chips (optional)
Butler's Berry Crisp

In bowl, combine oats, brown sugar, flour and salt
- 3/4 cup quick cooking rolled oats
- 1/4 cup flour
- 1/4 cup butter or margarine
- 1 quart fresh Butler's blackberries or raspberries, washed (1 quart of berries is approximately 3 cups)
- 1/2 cup packed brown sugar
- 1/4 tsp salt
- 2 tbsp sugar
Hot Cross Buns

Combine the yeast, sugar and milk in the bowl of an electric mixer fitted with a dough hook
- 1 envelope (1/4-ounce) dry yeast
- 3/4 cup sugar
- 1 1/2 cups warm milk (about 110 degrees F.)
- 1 stick of butter, melted
- 1 egg
- 1/2 cup of raisins
- 1 teaspoon salt
- 1/2 teaspoon ground cardamom
- 3 1/2 cups bleached all-purpose flour
- 1 teaspoon vegetable oil
- 1 large egg, beaten
- 1 cup powdered sugar
- 3 tablespoons milk
Potato Casserole

Mix first 4 ingredients together and 1/2 of the cheese (4 ounces)
- 2 pounds sliced thin potatoes
- 1 can of cream of chicken soup
- 1 pint of sour cream
- 3/4 cup of chopped onions
- 8 ounces of cheddar cheese
- 2 cups of corn flakes mixed with 1/2 stick of melted butter

Rice Pudding

- 2 cups water
- 3 eggs
- 1/2 cup milk
- 1 cup sugar
- 1/2 teaspoon cinnamon
- Dash of salt

- Nutmeg for garnish
