Roasted Butternut squash filled with Port-soaked Fruit

Preheat oven to 425 degrees F
- 1 - 1 1/2 lb. butternut squash, halved lengthwise and seeded
- 1 T olive oil
- 1/2 tsp salt
- 2 C port wine or pomegranate juice
- 1/4 C red wine vinegar
- 1/4 C sugar
- 1 C dried apricots, chopped
- 1/2 C dried tart cherries, chopped
- 1/2 C salted whole almonds, chopped
- aged white cheddar cheese, or gruyere cheese, shaved
- Toasted baguette slices
Yogurt - homemade yogurt with apple compote

Heat the milk in a large saucepan over medium-low heat until a thermometer registers 185 degrees F
- For the Yogurt:
- 4 4 4 cups whole milk
- 1/4 1/4 1/4 cup nonfat dry milk
- 1/4 1/4 1/4 cup maple syrup (optional)
- 1/4 1/4 1/4 cup plain yogurt with active cultures
- For the Apple Compote:
- 6 1/4 1 1/4 1/4 30 Smith apples, 1/4 cup brown sugar, 1 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, a pinch of salt and 1/4 cup water in a skillet over medium heat. Simmer until soft, stirring, about 30 minutes.

- to 8 yogurt to the refrigerator; chill at least 8 hours. Stir before serving.
