Ingredients

  • 2 C flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 C nuts
  • 1 C oil
  • 1 tsp. vanilla
  • 1/2 C sugar
  • 3 eggs
  • 2 C grated carrots
  • 1/2 C coconut
  • 1/2 C raisins

Step 1

Sift together flour, salt, soda, and cinnamon. Make a well in the dry ingredients, and add nuts, oil, vanilla, eggs, sugar, carrots, and optional raisins and/or coconut.

Mix well, and pour into well-greased 9x5x3" loaf pan. Let stand 10 minutes.

Bake at 325 degrees for approximately 1 hour.
