Ukrainian Plum Butter

Coat the inside of a large saucepan with the melted butter
- 9 lbs plums, pitted (about 7 quarts)
- 4 tablespoons butter, melted
- 4 tablespoons grated oranges (optional) or lemon peel (optional)
- 1 3/4 cups sugar
Chorizo bean burgers

1.In a food processor, pulse the chorizo, sausagemeat, paprika, lime juice and coriander until well combined
- 100 g mini cooking chorizo, skins removed
- 3 pork sausages, squeezed from their skins
- 1/4 tsp smoked paprika
- 1 tbsp lime juice, plus wedges to serve
- small bunch coriander, chopped
- 1/2 x 400g can mixed beans, drained and rinsed
- 1 medium egg, lightly whisked
- 1 1/2 tbsp olive oil, plus extra to drizzle
- 2 ciabatta rolls, split and toasted
- soured cream, avocado, small handful rocket and chips, to serve (optional)
Mediterranean Summer Squash

1. In a large skillet, saute onion in oil until tender
- 1/4 cup chopped onion
- 1 tablespoon olive oil
- 1 small yellow summer squash, thinly sliced
- 1 small zucchini, thinly sliced
- 1 garlic clove, minced
- 1 plum tomato, seeded and chopped
- 1/2 teaspoon dried oregano
- 1/4 cup crumbled feta cheese
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Everyday Dal

Bring all ingredients, except fresh coriander, to a boil on high heat
- 1 cup lentils
- 6 cups water
- salt to taste
- 3 ripe, medium tomatoes, chopped
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 2 Tbsp. finely chopped ginger
- 4 Tbsp. ghee
- 1 tsp. ground turmeric
- 1 tsp. whole cumin seeds
- 2 dry red hot peppers
- 1/2 cup chopped fresh coriander

Combine all, serve with balsamic vinegar, olive oil and parmesan cheese
- 2 cups mixed greens
- 1/8 cup red onion, sliced
- 6 cloves roasted garlic
- 1 ounce black olives
- 1/4 cup mixed seeds and nuts
- 1/8 cup lebanese couscous
- 1/4 ounce parmesan cheese, grated

Pine Forest Air Freshener

- 1 tsp. vodka
- 10 drops sandalwood essential oil
- 10 drops pine essential oil

Tomato Relish

This is a great tasting relish that I make every year when I have ripe tomatoes from the garden
- 12 cups tomatoes , chopped
- 2 cups onions , chopped
- 3 cups celery , chopped
- ¼ cup pickling salt
- 1 cup vinegar
- 1 tablespoon mustard seeds
- 2 ¼ cups sugar
- ½ teaspoon cayenne pepper
- 2 green peppers , sliced
- 1 (5 ½ ounce) can tomato paste
German-Style Red Cabbage

- 3 Granny Smith apples, thinly sliced
- 1 small onion, chopped
- 1 small red cabbage, shredded (1 3/4 pounds)
- 1/3 cup white vinegar
