Chicken Wellington (Puff Pastry-Wrapped Chicken)

Season the chicken breast with seasoning salt and pepper on all sides
- 2 sheets puff pastry (thawed for about 20 minutes)
- 8 small boneless skinless chicken breasts, uncooked
- 2 tablespoons butter
- 2 tablespoons oil
- seasoning salt (can use white salt)
- pepper
- 1 large onion, finely chopped (can use 2 onions)
- 1 tablespoon fresh minced garlic (optional)
- 1/2 lb fresh button mushroom, sliced (can increase if desired)
- 2 tablespoons finely chopped fresh parsley
- 1 (8 ounce) package cream cheese, softened (you may reduce the amount if desired)
- 2 tablespoons Dijon mustard
- 1 egg, slightly beaten

In a large resealable plastic bag, combine the mushrooms, peppers and zucchini
- 3 large portobello mushrooms, sliced
- 1 each medium sweet red, orange and yellow peppers, sliced
- 1 medium zucchini, sliced
- 10 fresh asparagus spears, cut into 2-inch lengths
- 1 small onion, sliced and separated into rings
- 3/4 cup grape tomatoes
- 1/2 cup fresh sugar snap peas
- 1/2 cup fresh broccoli florets
- 1/2 cup pitted Greek olives
- 1 bottle (14 ounces) Greek vinaigrette
- 1/2 cup crumbled feta cheese
Oriental Chicken Salad

In large bowl, mix together chicken, water chestnuts, green onions, sesame seed, almonds and poppy seed
- 4 chicken breasts, boneless skinless, cooked and broken into small pieces
- 8 ounces waterchestnuts, drained and sliced
- 3 green onions and tops, chopped
- 1/4 cup sesame seeds, toasted
- 1/3 cup sliced almonds, toasted
- 1 tablespoon Poppy Seed Dressing, recipe follows
- 3 ounces chow mein noodles
- 1 medium head iceberg lettuce, broken into small pieces
- POPPY SEED DRESSING
- 4 tablespoons sugar
- 4 tablespoons cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup vegetable oil
- 1/2 tablespoon poppy seeds
Salmon Marinade

Marinate 4 salmon steaks, in covered dish for 4-6 hours
- 4 salmon steaks
- 1/4 cup peanut oil
- 2 tablespoons soy sauce
- 2 tablespoons balsamic vinegar
- 1 1/2 teaspoons brown sugar
- 1 clove garlic, minced
- 3/4 teaspoon grated ginger
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon sesame oil
- 1/8 teaspoon salt

- 6 1/2 cupsall-purpose flour
- 2 tablespoonsbaking powder

paneer paratha – cottage cheese flatbread

preparing the dough: 1.make smooth dough with the whole wheat flour and enough water
- for the dough:
- 2 cups whole wheat flour/atta
- water
- for the paneer stuffing:
- 200 or 250 gms paneer
- 1 or 2 green chilies, finely chopped
- 1 tsp red chili powder
- 1 tsp mango powder
- 1/4 tsp or 1/2 tsp punjabi garam masala or garam masala powder
- salt or rock salt as required
- ghee or oil for frying the parathas
Cauliflower Crust Pizza

- 1 small to medium sized head of cauliflower - should yield 2 to 3 cups once processed
- 1/4 teaspoon kosher salt
- 1/2 teaspoon dried basil (crush it even more between your fingers)
- 1/2 teaspoon dried oregano (crust it even more between you fingers)
- 1/2 teaspoon garlic powder
- optional a few shakes of crushed red pepper
- 1/4 cup shredded parmesan cheese
- 1/4 cup mozzarella cheese
- 1 egg
- optional 1 tablespoon almond meal
