Tofu Sour Cream

- 8 oz.. firm silken tofu
- 3 Tbsp. lemon juice or vinegar
- 2 Tbsp. olive oil
- 1.5 tsp. honey, maple syrup, or sugar (walden farms syrup)
- 1/8 tsp. salt
Mexican Chicken

1.Set up a breading station
- 6-8 chicken breasts (I used the thin cut breasts)
- 1 cup yellow cornmeal
- 1 cup flour
- 1 packet taco seasoning (or a blend of Mexican spices)
- 2 eggs
- 1/4 cup oil
- 3 Tablespoons butter
- 1 avocado
- 1 bunch green onions

Easy Creamy Bruschetta

1. Lightly toast bread. Cut each slice into 4 squares, for a total of 16 squares
- 4 slices light bread
- 2 wedges The Laughing Cow Light Creamy Swiss cheese
- 1 cup seeded diced tomato
- 1/4 cup finely chopped sweet onion
- 1 tbsp. chopped fresh basil
- 1/2 tsp. chopped garlic
Balsamic Vinaigrette 2

This classic balsamic vinaigrette is perfect for even the most basic green salad
- 3/4 cup extra virgin olive oil
- 2 Tbsp balsamic vinegar
- 2 Tbsp red wine vinegar
- 1/4 tsp Dijon mustard
- 1 tsp minced fresh herbs (e.g. parsley, chives, tarragon)
- Kosher salt and ground white pepper (or freshly ground black pepper), to taste

Mix all the cereals in a very large bowl
- 1 box cheerios
- 1 box shreddies
- 1 box crispix
- 2 boxes cheese nips
- 1 lg bag pretzels
- 6 cups canola oil
- 2/3 cup Worcestershire sauce

- 3 tsp. garlic powder
- 3 tsp. celery salt
Basmati Rice - Indian Style

- 1 1/2 cups basmati rice
- 2 tablespoons vegetable oil
- 1 cinnamon stick (2 inch) 2 green cardamom pods
- 2 whole cloves
- 1 tablespoon cumin seed

- 2 1/2 cups water
- 1 small onion, thinly sliced
Crock Pot Teriyaki Chicken

- 1 large onion (diced)
- 1 cup soy sauce
- 1 cup brown sugar
- 2 teaspoons ground ginger

Mini Spiced Chicken Burgers with Mint Greek Yogurt

I'm going to try this with tzatziki rather than the mint yogurt
- Chicken mince – 250 gms
- Chopped red chillies – 2 ; seeds removed – adjust if to your taste. I used Scotch Bonnet , but even Thai red chillis are fine
- Chopped Garlic – 3 cloves
- Finely chopped Red Onion – 1
- Chopped Corriander – handful
- 1 tsp Red Chilli pd
- 1 tsp Cumin pd
- 1 tsp Kafta spice
- Salt to taste
- Lebanese cucumber sliced with skin on
- Greek Yogurt
- Chopped fresh Mint
- Few leaves of fresh crunchy lettuce
Greek Hummus Pizza

Brush the olive oil onto the crust with a pastry brush
- 2 tbsp extra virgin olive oil
- 1 cup Summer Fresh Roasted Garlic Hummus
- 1 cup fresh baby spinach leaves
- 1/2 red onion, sliced
- 3 cocktail tomatoes, sliced
- 1/3 cup black olives, pitted and sliced
- 2 cup mozzarella cheese, grated
- 1/2 cup feta cheese, crumbled

In rural communities, corn-based meals are consumed daily
- 1 and a half pounds of chicken breast or beef
- 1 pound of corn flour or “masa”*
- 2 yellow onions
- 2 bell peppers
- 3 tomatoes
- 1 roll of spearmint (needed for flavor, although you can use cilantro as a substitute)
- Chicken or beef seasoning (approximately two bouillon cubes)
- 1 bitter orange (you can use lemon as a substitute)
- 4 ounces of butter
- Achiote or annatto (needed for coloring, although you can use sweet paprika as a substitute)
- 6 garlic cloves
- Approximately half a gallon (2 liters) of water
