Caramel Sauce

Used for ice cream topping over brownies or whatever
- 1/2 cup sugar
- 1/8 teaspoon cream of tartar
- 2 tablespoons heavy cream
- 2 tablespoons butter - into small pieces
- 2 tablespoons water
- 1/2 teaspoon of salt
Red Beans and Rice with sausage

Cook rice according to package directions
- 1 package of sausage - (Johnsonville Andouille, 13.5 oz)
- 1 tablespoon of olive oil
- 3 stalks of celery, diced
- 1 medium onion, diced
- 1 medium green (red) pepper, diced
- 3 cloves garlic, minced
- 1/2 cup water
- 2 bay leaves.
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 2 cans of light red kidney beans (16 oz)
- 1 cup of cook white rice
Corn Beef & Cabbage Slow Cooker Method

This is a good way to cook corn beef all in one pot that does not required a lot of watching
- 6 small red potatoes cut into eights
- 1 1/2 to 2 cups baby carrots
- 1 small onion peeled and cut into eights
- 2 to 3 pounds corned beef brisket rinsed and trimmed
- 2 tablespoons mixed pickling spice put into cloth bag
- 1 teaspoon garlic, minced
- 1/2 head cabbage, cored and cut into wedges.
Sausage, Cheese and Onion Panini

- 3 tablespoons olive oil
- 1 tablespoon butter
- 2 large yellow or valdalia onions thinly sliced
- 1/4 cup apple brandy (or liqueur)
- salt and pepper to taste
- 4 cooked sausages (polk, chicken, turkey)
- Dijon mustard
- 4 oz Gruyere cheese thinly sliced
- 8 1/2 -inch thick slices of french bread (or the like)

- 1 pound Veggie crumbles
- 1 cup chopped onions
- 1 clove minced garlic
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano leaves (crushed)
- 1 teaspoon cocoa (secret ingredient)
- 1/2 teaspoon red pepper sauce (tabasco)
- 16 oz can stewed tomatoes (don't drain)
- 1 - 16 oz can Dark Red Kidney beans (rince well)
- 1 - 16 oz can Black beans (rince well)
- 1 - 16 oz can Pinto Beans (rince well)
- 16 oz can tomato sauce
- 16 oz water
- 2 tablespoons olive oil
Dijon Sauce

This sauce will require drippings form fried or roasted chickens
- Chicken drippings in same pan as chicken was cooked.
- 2 small shallots thinly sliced.
- 3/4 cup dry white wine
- 3/4 cup chicken broth
- 1/4 cup heavy cream
- 2 tablespoons Dijon mustard
- 1 tablespoon finely chopped chives
Chicken, Lemon

Put the rice on to cook according to package directions
- 4 medium boneless skinless chicken breast halves
- 1/3-1/2 cup of flour
- 1/2 teaspoon salt
- 2 teaspoon of lemon pepper
- 1/4 cup butter (or a combination of olive oil and butter)
- 2 lemons - sliced
- 2 tablespoons lemon juice
- hot cooked rice
Braised Beef with vegs

Dinner in a pot up to the cook what goes into this pot
- 2 to 2-1/2 lb. flank steak, rolled and tied
- 3 tablespoon olive oil
- 8 oz. mushrooms, trimmed and halved
- 1 medium onion cut into 1/8
- 4 or 5 small potatoes cut into quarter size
- 1/4 lb. olives, pitted (calvestrano or like item)
- 1/4 lb. carrots peeled, small cut into 1 to 1-1/2 inches long
- 2 garlic cloves, minced
- 1 tablespoon beef demi-glace (or like item)
- 1-1/2 cup beef stock
- 1/2 teaspoon rosemary
- 1 teaspoon thyme
- salt and pepper to taste
- OTHER VEGS at cooks option (consider cook time when to add)
Waldorf Salad -

- 2 cups diced tart apples
- 1 tablespoon sugar
- 1/2 teaspoon lemon juice
- Dash of salt
- 1 cup chop celery
- 1/2 cup broken walnuts
- 1/4 cup mayonnaise
Beef Barbecue -

- 2-1/2 pound pot roast (chuck roast or beef brisket)
- 1 large onion
- 3 tablespoons sugar
- 4 tablespoons vinegar
- 4 tablespoons Worcestershire sauce
- 1 bottle of ketchup (14 oz.)
- 2 oz. pickling spice put in a cloth bag and seal
- 1/4 cup Crisco for browning
