Pasta goes well with about any vegetable, like peas, or sun gold tomatoes
- options:
- serving for two
- 6 oz of dry Pasta (3 oz per serving) - can be fettuccine, spaghetti or capellini.
- 3 oz of fresh or frozen peas
- 2 tablespoons of butter or olive oil
- 1 cup of pasta cooking water reserved.
- salt and pepper to taste.
- 1/2 to 3/4 cup of finely grated Cheese - Parmesan or Grana Padano, or Parmigiano Reggiano, or Pecorino (anything to your taste).
- peas and shallots
- cauliflower and caramelized onions
- mushrooms and thyme
Broccoli Salad

- Salad Mixing
- 1/2 cup chopped walnuts
- 1 cup raisins
- 3 heads broccoli chopped (6 cups)
- 1/2 small red onion (1/2 cup)(adjust amount to your taste)
- Dressing
- 1 cup mayo
- 2 tablespoons sugar (add slowly adjust to your taste)
- 3 tablespoons red wine vinegar
- fresh grapes instead of raisins
- dried crainraisin
Chicken Roasted in Rosemary with Potatoes

Roasted in rosemary, paprika and olive oil
- 2 chicken breast - boanless and skinless
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 pound of potatoes cut into 1-inch cubes
- 2 teaspoons peprika
- 1-1/2 teaspoons crushed rosemary leaves
- 1 teaspoon minced garlic
- 1/2 teaspoon coarse ground black pepper
Lemon Meringue Pie

- 1 graham cracker pie shell
- Filling
- 4-5 oz of lemon juice (3 lemons)
- 6 eggs yolks
- 2 14 oz cans of sweetened condensed milk
- Meringue
- 4-5 egg whites
- 1/4 teaspoon cream-of-tartar
- 1/2 teaspoon vanilla extract
- 6 tablespoon of sugar
Rosti Potatoes -

easy potato grater is needed use a box grater or Turning slicer (like a Spirooli)
- 1 baking potatoes
- 3 tablespoon butter
- (clarified butter if you have it)
- 1/4 teaspoon salt & pepper
Chocolate Pudding Cake

This is a perfect chocolaty pudding cake
- PUDDING CAKE:::::::
- 3/4 cup granulated sugar
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/3 cup butter, melted
- 1 1/2 teaspoons vanilla extract
- if at altitude above 3500 feet you may need to add 2 tablespoons of flour otherwise cake will be to soupy.
- TOPPING:::::::
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/4 cup cocoa powder
- 1 1/4 cups hot water
- Mint chocolate chip ice cream, for serving

- dried fruit (like craisins -cranberries, cherries, raisins)
- chopped nuts like pecans or walnuts
Chicken Breasts in Lemon Butter

Place each chicken breast half between two pieces of plastic wrap
- 6 medium boneless skinless chicken breast halves (1-1/2 pounds)
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 2 teaspoons lemon pepper seasoning
- 1/3 cup butter
- 2 lemons, sliced
- 2 tablespoons lemon juice
- Hot cooked rice or pilaf (optional)
Soup - Wild Rice & Cranberry

Soup will keep for 3 days in a covered container in the refrigerator
- 4 tablespoons butter
- 1 carrot, finely chopped
- 1 celery stalk, finely chopped
- 1/2 cup onion, finely chopped
- 3 tablespoons all-purpose flour
- 3 cups vegetable stock ( or chicken stock)
- 1-1/2 cups cooked wild rice
- 1/2 to 1 cup dried cranberries
- 1 cup of milk or half-and-half
- 2 tablespoons dry sherry
- salt and pepper to taste
