Corn Beef & Cabbage Slow Cooker Method

This is a good way to cook corn beef all in one pot that does not required a lot of watching. A great "set it and forget it" slow cooked weeknight meal the whole family can enjoy!
Ingredients
- 6 small red potatoes cut into eights
- 1 1/2 to 2 cups baby carrots
- 1 small onion peeled and cut into eights
- 2 to 3 pounds corned beef brisket rinsed and trimmed
- 2 tablespoons mixed pickling spice put into cloth bag
- 1 teaspoon garlic, minced
- 1/2 head cabbage, cored and cut into wedges.

Step 1
Place prepared potatoes, carrots and onion in slow cooker - bottom layer.
Place corned beef brisket over vegetables - layer two.
Add the pickling spice and minced garlic. Add enough water (5 to 8 cups) to just cover the meat. Put top on slow cooker
Cook about 5 hours on high. When meat begins to get tender add cabbage on top - layer three. Cook cabbage 1 to 2 two hours until cabbage is tender crisp.
Cook time will vary depending upon size of meat and what you got in the pot. Removed corned beef brisket to serving platter.
Slice thinly across grain, serve with vegetables and enjoy!
