Fleming’s Potatoes

Remove seeds from jalapeños and dice finely
- 3 Tbsp. jalapeños
- 4 oz. leeks
- 1-1/2 tsp. Kosher salt
- 1 tsp. black pepper
- 1-1/2 oz. butter, lightly salted
- 2 cups heavy cream
- 1-1/2 cups half & half
- 4 oz. cheddar cheese, grated
- 4 oz. jack cheese, grated
- 3 lbs. Idaho russet potatoes

- 1/2 cup powdered Splenda
- 1/2 cup Davinci Syrup (any flavor is good)
- 1/2 stick unsalted butter, melted
- 1 tsp spice (1 use cinnamon) you can use more spices if desired.
Plum And Almond Cobbler

In a large bowl whisk together brown sugar, cornstarch, and cinnamon and add plums, lemon juice, and butter
- 1/2 cup firmly packed light brown sugar
- 1 tablespoons cornstarch
- 1/2 teaspoon cinnamon
- 21/2 pounds prune plums or other plums, pitted and quartered
- 2 tablespoons fresh lemon juice
- 2 tablespoons unsalted butter, cut into bits
- 1 cup granulated sugar - (used 1/2 cup or a little more, 1 cup is too sweet)
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup sliced almonds
- 1 large egg, beaten lightly

- 1 (14.75 ounce) can salmon, drained and flaked
- 2 eggs, beaten
- 1 small onion, diced
- 1 teaspoon ground black pepper
- 3 tablespoons vegetable oil
COCONUTTY CRUNCH

Coarsely chop the nuts and put them in a medium bowl
- 2 ounces walnuts
- 4 ounces pecans
- 2 ounces almonds (I like sliced)
- 2 ounces unsweetened coconut, 1/2 cup
- 2-4 tablespoons flax meal
- 1-2 ounces unsalted sunflower kernels
- 2 tablespoons butter, melted
- 1/3 cup granular Splenda or equivalent liquid Splenda
- 1/2 teaspoon vanilla
- Pinch salt, optional
- 1 teaspoon cinnamon
Sea Scallops With Mushrooms And Spinach Recipe

- 6 good-sized sea scallops, shelled and cleaned;
- 5 oz. mushrooms, sliced;
- 6 oz. spinach, washed and stems trimmed;
- Fresh nutmeg, for grating;
- 3 tbsp. of ghee;
- 2 tsp. coconut oil;
- Sea salt and freshly ground black pepper to taste;

1 Preheat oven to 425 degrees
- Noodles
- 2 large eggplants, peeled, sliced lengthwise into 1/4 inch noodle-like strips
- cooking spray (olive oil spray is best)
- salt and pepper
- Meat Sauce
- 1 1/2 lbs ground sirloin or 1 1/2 lbs turkey breast or 1 1/2 lbs Italian sausage
- 2 tablespoons olive oil
- 2 onions, chopped
- 3 cloves chopped garlic
- 1 red pepper, chopped
- 1 (16 ounce) package sliced mushrooms
- 2 tablespoons italian seasoning (or mix of oregano, basil and thyme)
- 1 teaspoon fennel seed (optional)
- salt and pepper
- 1 teaspoon red pepper flakes (if you dare!) (optional)
- 1 (10 ounce) package frozen chopped spinach
- 1 cup red wine (optional) or 1 cup vodka (optional)
- 1 (28 ounce) can tomato sauce (or large jar sugar free sauce if you can find it)
- 1 (15 ounce) can diced tomatoes (for less sugar, 3 chopped roma tomatoes)
- Cheese Mixture
- 2 cups low-fat ricotta cheese
- 2 eggs
- 3 green onions, chopped
- 3 cups shredded lowfat mozzarella cheese
- 1/2 cup parmesan cheese

- FILLING:
- 1-1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 3/4 cup sugar
- 1/3 cup sour cream
- 3 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 3 eggs, lightly beaten
- 1 package (10 to 12 ounces) white baking chips
- 1/4 cup seedless raspberry jam
