Strawberry-Spinach-Chicken Salad with Citrus Dressing

- 4 medium skinless, boneless chicken breast halves (1 1/4 to 1 1/2 pounds)
- 1/4 teaspoon black pepper
- 1/8 teaspoon salt
- 1 cup reduced-sodium chicken broth
- Warm Citrus Dressing
- 6 cups torn fresh spinach and/or watercress
- 2 cups halved strawberries
- 1/4 cup chopped pecans, toasted

- 5 TBSP Butter or Coconut Oil, softened but not melted

- CARAMEL SAUCE:
- 1 can (30 ounces) pumpkin pie mix
- 1 cup sugar
- 1 can (5 ounces) evaporated milk
- 3 eggs
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1 package (18-1/4 ounces)
- yellow cake mix
- 1 cup butter or margarine, melted
- 1-1/2 cups chopped pecans
- 1 cup butter or margarine
- 2 cups packed brown sugar
- 1 cup whipping cream
- TOPPING:
- 2 cups whipping cream

- 1/4 cup sliced green onions
- 1/4 cup cashews (one 7 oz. Jar if doubled)
- 1/2 cup sour cream

ATHENO GREEK SALAD

TOSS greens, olives, tomatoes, onion and cucumber with dressing, Spoon onto serving platter
- 1 pkg. (10 oz.) salad greens
- 1 cup California ripe olives or Greek olives
- 3 plum tomatoes, cut into wedges
- 1/2 cup thinly sliced red onion
- 1/2 medium cucumber, peeled, cut into wedges
- Greek Dressing (recipe below) or
- 2/3 cup Italian Dressing
- 1 pkg, (4 oz.) Crumbled Feta Cheese
- GREEK DRESSING
- 1/2 cup Olive Oil
- 1/4 cup fresh lemon juice (1 lemon, squeezed)
- 1 clove garlic, minced
- 1 tsp. dried oregano leaves
- 1/4 tsp. pepper
- 1/2 tsp. salt or to taste
- MIX oil, juice, garlic and seasonings.

Slow Cooker Beef Short Ribs with Rosemary and Black Olives - Good

- 1/2 tsp dried rosemary
