- 1 can (15 oz..) LIBBY’S® 100% Pure Pumpkin
- 1 pkg. (8 oz.) 1/3 less fat cream cheese, at room temperature
- 3 tablespoons sliced jalapeños juice
- 1 container (8 oz.) reduced fat sour cream
- 1 can (4 oz.) diced green chiles
- 2 tablespoons chopped, sliced jalapeños
- 1/4 teaspoon garlic salt
- 1 medium tomato, seeded and chopped
- 1 can (21/4 oz.) sliced ripe olives, drained
- 2 green onions, sliced
- 1/4 cup finely chopped red onion
- Tortilla chips

Almost-Famous Corn Salsa

Likd Chipotle's Roasted Chili-Corn Salsa
- 1/2 small poblano chile pepper, seeded
- 3 teaspoons extra-virgin olive oil
- Kosher salt
- 1 cup fresh corn kernels (from 2 ears), or 1 cup frozen corn, thawed
- 1 small jalapeno pepper, seeded and chopped
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons chopped red onion
- 2 tablespoons fresh lime juice
- 1/2 teaspoon sugar
Avocado-Herb Dressing

Great "light" dressing over butter lettuce with goat cheese
- 1 Ripe Hass Avocado, cubed
- 1/3 cup light Sour Cream
- 1/2 cup Buttermilk
- Dash of Lemon Juice
- 1 clove garlic, minced
- 1 TB of chives or green onions, finely chopped
- Handful of fresh Dill, finely chopped
- 1 TB fresh Parsley, finely chopped
- 1/8 tsp dried tarragon
- 1 TB White Wine Vinegar (Optional)
- Salt & Pepper
Sweet Potato Casserole

- Topping:
- 3 lbs sweet potatoes, peeled and chopped
- 1 cup half & half or 1/2 cup Evaporated Milk
- 1/3 cup packed brown sugar
- 2 TB Butter
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 1 tsp vanilla extract
- 1 large egg
- 1 1/4 cups cornflakes or special K cereal, crushed
- 1/4 cup chopped pecans
- 1 tablespoon brown sugar
- 1 tablespoon melted butter
- 1 1/4 cups miniature marshmallows

TORTILLA CHIP & PEPPER JACK CRUSTED CHICKEN WITH AVOCADO & JALAPENO RANCH

- 4 boneless, skinless chicken breasts
- One 12-ounce bag tortilla chips
- 4 ounces Pepper Jack cheese, shredded
- 1 C mayonnaise
- 1/2 T garlic powder
- 1/2 T cumin
- 1/2 T chili powder
- 2 teaspoons lime juice
- 1 C mayo
- 1/2 C buttermilk
- 1 C sour cream
- 1 packet Ranch dip mix
- 1 T garlic powder
- 1 T onion powder
- 1-3 T diced jalapeno slices (from a jar)
- 1 teaspoon lime juice
- 2 avocados
