Frozen Key Lime Pie (Paula Deen)

In a medium bowl, combine cracker crumbs and brown sugar

- Ingredients
- 2 cups graham cracker crumbs
- 1/4 cup firmly packed brown sugar
- 1/2 cup butter, melted
- Pie:
- 1 cup heavy whipping cream
- 1/2 cup sugar
- 1 (12-ounce) can sweetened condensed milk
- 3/4 cups key lime juice
- 1 tablespoon key lime zest
- 1 pint half-and-half
- Fresh lime slices. for garnish
- Directions
- Preheat oven to 350 degrees F.
Carmelized Onions & Goat Cheese Tartlets

Preheat the oven to 425 degrees F
- 1 package (17.3 ounces/2 sheets) puff pastry, defrosted
- 2 TB olive oil
- 4 cups thinly sliced yellow onions (2 large onions)
- 2 large garlic cloves, minced and pasted
- salt and freshly ground black pepper
- 1/4 cup dry white wine
- 1 sprig fresh thyme
- 2 bay leaves
- 1/2 cup chicken stock
- 4 tablespoons freshly grated Parmesan
- 4 ounces garlic-and-herb goat cheese (recommended: Montrachet)

1. Place potatoes in a saucepan; cover with water
- 1 pound new potatoes or fingerling, quartered
- 1 tablespoon extra-virgin olive oil
- 2 (6-ounce) beef tenderloin steaks, trimmed
- 1/2 teaspoon salt, divided
- 3/8 teaspoon freshly ground black pepper, divided
- 3 bacon slices
- 2 teaspoons all-purpose flour
- 1/4 cup white wine vinegar
- 3 tablespoons water
- 2 teaspoons sugar
- 1 teaspoon Dijon mustard
- 1/3 cup shaved celery
- 2 tablespoons thinly sliced green onions
- 3 cups baby arugula
Mom's Spinach Salad

Mix salad ingredients in bowl
- Dressing:
- fresh spinach
- red onion sliced
- mushrooms, sliced
- 5-6 slices of bacon, crumbled
- 2 boiled eggs, chopped
- 1/2 cup vegetable oil
- 1/4 cup apple cider vinegar
- 1 teaspoon onion powder
- 1/2 teaspoon dry mustard

New Orlean Bourbon Bread Pudding (Cooks Country)

1. Adjust oven rack to middle position and heat oven to 450 degrees
- 3 cups heavy cream
- 3 tablespoons granulated sugar
- 1 cup whole milk
- 1 cup golden raisins
- 1 tablespoon vanilla extract
- 1 French baguette (18- to 20-inch), torn into 1-inch pieces (10 cups)
- 1 1/2 cups packed light brown sugar
- 1 1/2 teaspoons ground cinnamon
- 6 tablespoons unsalted butter , cubed and chilled, plus extra for baking dish
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 8 large egg yolks
- 3/4 cup bourbon
Layered Mexican Salad

- 1 package cornbread mix (and the ingredients necessary to make the cornbread) - I use Jiffy brand
- 1 (4.5-ounce) can chopped green chiles
- 1 c. light mayonnaise
- 1/2 c. low fat plain yogurt
- 1/2 c.+ chopped fresh cilantro
- 1/4 c. fresh lime juice
- 1 small clove, minced
- 1 t. ground cumin
- 1/2 t. salt
- 10 oz package of Romaine Lettuce, chopped
- 1 (15-ounce) can black beans, rinsed and drained
- 1 1/2 cups frozen sweet corn, thawed
- 1 (8-ounce) package reduced-fat shredded Jack & Cheddar cheese
- 1/2 red bell pepper, chopped
- 1/4 cup red onion, chopped
- 1 avocado, cubed (optional)
- Garnish: green onion curls
Zucchini and Caramelized Onion Quiche

- 1/2 (14.1-ounce) package refrigerated pie dough (such as Pillsbury)
- 1 tablespoon olive oil
- 4 cups (1/8-inch-thick) slices zucchini
- 3 garlic cloves, minced
- 3/4 teaspoon kosher salt, divided
- 1/2 cup finely chopped Basic Caramelized Onions
- 1 cup 1% low-fat milk
- 1 1/2 tablespoons all-purpose flour
- 1/2 teaspoon freshly ground black pepper
- 3 large eggs
- 2 ounces Parmigiano-Reggiano cheese, grated (about 1/2 cup)
Fish Tacos with Avocado Sauce

In a large resealable plastic bag, combine the lemon juice, oil and garlic
- SAUCE:
- 1/4 cup lemon juice
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 pound halibut or tilapia fillets
- 2 medium ripe avocados, divided
- 1/4 cup fat-free sour cream
- 1/4 cup reduced-fat mayonnaise
- 1 tablespoon lime juice
- 1 garlic clove, minced
- 1 teaspoon dill weed
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried parsley flakes
- Dash cayenne pepper
- SALSA:
- 1 medium tomato, seeded and chopped
- 1 small red onion, chopped
- 4-1/2 teaspoons chopped seeded jalapeno pepper
- 1 tablespoon minced fresh cilantro
- 1-1/2 teaspoons lime juice
- 1 garlic clove, minced
- 1/8 teaspoon salt
- TACOS:
- 8 flour tortillas (6 inches)
- 2 cups shredded cabbage
Roasted Carrot, Squash, and Sweet Potato Soup (Rachael Ray)
