French Onion Soup (L'Academie de Cuisine)

Culinary Skills Lab - Soups - 1/30/12 Chef/Instructor - Sandy Patterson
- 2 Large Yellow Onions
- 2 TB Butter
- 6 cups chicken, beef or veal stock
- 1 bouquet garni (Peppercorns, thyme parsley stems, and bay leaf in cheesecloth)
- 1 cup grated gruyere cheese
- 4 slices of french bread, toasted
Vanilla Cupcakes

- Frosting:
- 1 Box of Yellow Cake Mix (I used Duncan Hines)
- 1/3 cup water
- 1 cup milk
- 4 eggs
- 1/4 cup melted unsalted butter
- 1 TB vegetable oil
- 1 package of sugar free Cheesecake pudding
- 2 cans of Betty Crocker "whipped" Cream Cheese Frosting.
- Food Coloring
Roasted Red Pepper Sauce

Great spread on roasted veggie sandwiches (with toasted Ciabatta bread)
- 1 garlic clove, minced
- 1/8 tsp salt
- 1/2 cup bottled roasted red peppers, rinsed and drained
- 1 TB dry roasted almonds, coarsely chopped
Raspberry Chicken

1. Heat oil in pan with cooking spray over medium-high heat until hot
- 1 teaspoon oil
- Cooking Spray
- 1/2 cup red onion, chopped
- 1/2 teaspoon thyme
- 1/2 teaspoon salt
- 4 boneless chicken breasts, skinned
- 1/3 cup seedless raspberry preserves
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon pepper
Long Boy "Burgers"

Based on "Cooks Country" recipe
- 4 (6-inch) sub rolls, split in half lengthwise
- 1 1/4 cup cornflakes, crushed
- 1/2 small onion, minced
- 1/2 cup whole or lowfat milk
- 6 tablespoons ketchup, separated
- 1 tablespoon Worcestershire sauce
- 1 teaspoon minced fresh thyme
- 1/2 teaspoon garlic powder
- 1 large egg, lightly beaten
- Salt and pepper
- 1 1/2 pounds 90% lean ground beef
- 2 cups shredded cheddar cheese
Kahlua Cake

- Glaze:
- 1 box yellow cake mix
- 1 chocolate pudding instant (6 serving)
- 1 cup oil
- 4 eggs
- 3/4 c water
- 1/4 c kalua
- 1/4 c vodka
- 1/2 c sugar
- 1/4 c Kailua, 1/4 powdered sugar
- Whisk and drizzle on top or use just plain powder sugar to dress it up...
Pork and Shiitake Pot Stickers

- 2 tablespoons dark sesame oil
- 3/4 cup thinly sliced green onions, divided
- 1 tablespoon minced garlic
- 1 tablespoon grated peeled fresh ginger
- 4 ounces thinly sliced shiitake mushroom caps
- 5 tablespoons lower-sodium soy sauce, divided
- 1 tablespoon hoisin sauce
- 1/2 teaspoon freshly ground black pepper
- 14 ounces lean ground pork
- 40 gyoza skins or round wonton wrappers
- Cornstarch
- 1/4 cup hot water
- 2 tablespoons brown sugar
- 2 tablespoons rice wine vinegar
- 1 1/2 tablespoons sambal oelek (ground fresh chile paste)
- Cooking spray
Toasted Marshmallow S'more Bars

- 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix (tend to not quite the whole pouch and more graham cracker crumbers)
- 1 cup graham cracker crumbs
- 1 cup butter or margarine, melted
- 3 cups semi-sweet chocolate chips (18 oz)
- 4 cups miniature marshmallows

- 1 lb Very Good Quality Semi-Sweet Chocolate

Beer Battered Fish Tacos

Pour oil to depth of 1 1/2 inches into a deep skillet or Dutch oven; heat to 360°
- Red Pepper Crema:
- 1 pound firm white fish fillet, cut into 1 inch chunks
- Vegetable oil
- 1 cup all-purpose flour
- 1 tsp Mexican Seasoning
- 1/2 teaspoon baking powder
- 1 cup beer
- 1/2 teaspoon hot sauce
- 8 flour or corn tortillas, warmed
- 1 lime, cut into wedges
- 3/4 cup Monterey or Pepper Jack cheese
- Shredded green cabbage
- Cilantro
- Red onion, cut into strips
- 1/4 cup mayo
- 1/4 cup sour cream
- 1/4 cup red pepper/pimento
- 1 clove garlic
- mexican seasoning
- 1 tsp. lemon juice
- Mexican Seasoning:
- 1/2 tsp cayenne pepper
- 1 tsp cumin
- 1/2 tsp oregano
- 1 tsp salt
